| Notes: Mash in at 148 degrees for 60 minutes. Raise temp to 170 for 10 minutes. Filter and move to brew kettle. Sparge and let sit for 20 minutes. Drain to brew kettle. Boil for 60 minutes, adding 1 oz. El Dorado hops at 60 minutes; .75 oz. El Dorado at 20 minutes; .75 oz. Medusa hops at 15 minutes; .75 African Queen hops at 15 minutes; Dry hop with .75 oz. Medusa and African Queen hops after racking to secondary. |

Notes: Starter of oz 7.2 oz DME with 1.8 liters water. Target cells 453 billion cells. Starter will provide 458 billion.
Add 1/4 Campden tablet each to strike water and to sparge water to eliminate chlorine.
Ferment: Pitch at 45 and let rise to 50 over next 24 to 36 hours. Leave until activity slows then begin to raise temp 2 degrees per day up to 60 degrees. When finished fermenting, lager at 35 for 3-4 weeks. |

.25 tsp allspice
add above "spice pouch" to final 5 minutes of boil.
4 oz vanilla bean vodka solution (2 beans, brooklyn vodka)
1 tsp pumpkin pie spice
1.5 tsp graham cracker extract
add above to to secondary (2 weeks).
Placed 2nd in Seasonal Spiced beer at the AWOG 2020 home brewers contest. |

Notes: What better way to celebrate the Summer solstice than following it up with an outdoor brew day? About ten years ago, the AHA figured out that one of our neighbors and talented musicians, Kyle Hollingsworth, was a big fan of homebrewing. Hollingsworth spoke about his evolution with brewing beer and the person who taught him to make it, Bruce Payne. This beer is Payne’s recipe, a spicy Belgian ale with notes of ginger and orange zest.
