Cut 2 lbs of pumpkin into cubes.
bake @ 350 for 45 minutes.
separate skin, mash, and coat with honey.
bake @ 350 for another 45 minutes.
let cool to mash temp and add to mash.
.5 tsp ground ginger
2cinnamon sticks
.25 tsp whole cloves
.25 tsp nutmeg
.25 tsp allspice
add above "spice pouch" to final 5 minutes of boil.
4 oz vanilla bean vodka solution (2 beans, brooklyn vodka)
1 tsp pumpkin pie spice
1.5 tsp graham cracker extract
add above to to secondary (2 weeks).
Placed 2nd in Seasonal Spiced beer at the AWOG 2020 home brewers contest.
