Notes: Mash at 151°F (66°C) with 18 qt. (17 L) of water. Batch sparge at 170°F (77°C). Collect approx 6.5 gal. (24.6 L) of pre-boil wort. Boil 60 minutes, adding hops as indicated. Add whirlpool hops immediately after boil and leave in contact with wort during chilling.
Chill to 75°F (24°C) and pitch yeast. Ferment at 70°F (21°C). Ferment for 2 weeks but do not rack to secondary. Perform a low-oxygen transfer to a keg with 1 oz. Cryo Hops Citra in a stainless tube and force carbonate. |

Simple grain bill base of pilsner, and then ~10% of flaked oats, white wheat, and Chit malt. Hop bill is Citra, Simcoe, Columbus, and Mandarina (which was originally supposed to be Cascade, but I'm out) trying to keep around 10 IBU's and 6oz in the dry hop. S-04 because it's good. |

Notes: Using light colored and malty water profile as it hits that 1.5/1 Cl/SO4 ratio and keeps other things low except Ca. Just what we wanted. Chemicals as noted - added campden tablets and acid before heating water - in the water profile calculator we checked the boxes:
'salts added to MASH only' AND
'specify acid by target mash pH'
It told us to add 20.25 ml of acid to target pH 5.22. Measured at 4.94 - what the hell!?
All else good - first runnings at 82 as always, final at around 7-8
Pre-boil 1.059 - we decided not to skim
First addition of dry-hops at 1.020. Second at terminal a few days later. Each left in 36 hours. Best hazy yet! Good tropical aroma and flavor. Cooling the wort to 180 before the whirlpool hops is key we think.

Notes: Hit pH-5.2 @ mash temp. Ferment, starting 66F, ramp to 75F over 7 days. Add dry hops 7-10 days before finish-ferment.
4 weeks into ferment, racked into second carboy, fermented 2 weeks, cold crashed 1 week. Still had yeast in suspension but racked into kegs, will let the 31F temp finish dropping yeast out. Fully attenuated, nice sweetness, esters, some phenolics. Tastes good right now! Will taste in 1 month. |
