Notes
Hit pH-5.2 @ mash temp. Ferment, starting 66F, ramp to 75F over 7 days. Add dry hops 7-10 days before finish-ferment.
4 weeks into ferment, racked into second carboy, fermented 2 weeks, cold crashed 1 week. Still had yeast in suspension but racked into kegs, will let the 31F temp finish dropping yeast out. Fully attenuated, nice sweetness, esters, some phenolics. Tastes good right now! Will taste in 1 month.
