Notes: Instructions:
1.) Mash at 154 degrees for 45 mins
2.) Sparge the grains until you have 6 gallons of wort
3.) Start the boil (total boil time is 70 minutes)
4.) Right when the wort begins to boil, add the Simcoe hops.
5.) 10 minutes into the boil, add 1 lb of lactose
6.) Allow to boil for the remaining 60 minutes
7.) Reduce the temperature to around 180 degrees and add the whirlpool hop additions & 1 vanilla bean. Whirlpool for 15-20 minutes
8.) Chill the wort to 65-70 degrees
9.) Transfer to fermenter and pitch the yeast
10.) After 1 day, add 1 oz Citra and 1 oz Mosaic
11.) After 2 more days (3 days total fermentation) add another 1 oz Citra and 1 oz Mosaic
12.) After the yeast drops, add the remaining 2 oz of Citra and 2 oz Mosaic as well as the remaining vanilla bean.
13.) Let ferment for at least 14 days total |

Punk multiplied by Jack Hammer, divided by passionfruit with some Brazilian spirit factored in too. A well-rounded IPA, with bags of tropical flavour boosted by the addition of passionfruit, which unsurprisingly dominates the aroma of this summery IPA. Try adding some of the passionfruit in the cold conditioning phase.

| Notes: Good safe Irish Red. Water profile makes this a perfect recipe for the area. I fly sparge to get the most out of the grains which usually gives a good flavour profile as well. But be aware that batch sparging will probably not be as efficient and will also change the flavour profile slightly. |
