The 2nd candi sugar went into fermentor w the 6 oz of dme and enough water to make it work. This program had an error and would not account for the gravity change if I clicked on fermentor addition so I needed to say it was in the boil to get the correct calcuclations.

Notes: This is intended to be a low alcohol (“NA”) beer.
Added custom attenuation for the yeast @ 25%. Plan to add potassium sorbate to stop yeast reproduction to try to hit that value. (Probably about 2-3 points prior to FG)

Also using Windsor ale yeast, which will not convert maltotriose during fermentation. Will use only about 1/2 the yeast pack. No starter, sprinkled directly on wort.

For my low alcohol brews I use a very coarse grind on the grain (poorly crushed). Mash is very high, at 170F, and only for about 10-15 minutes. I do a fly sparge, also ensuring the water stays warm during the sparge. (But not too warm, should not go over 175).

Using acidulated malt to help ensure very low mash pH.

Note: blending mash and sparge H2O so that everything is hot. Mash is only about 15 minutes, and that isn’t enough time to heat the 5.5-6 gal of sparge water. Best to just have it all ready to avoid delays.
