Notes: Yeast: Vermont Ale Yeast (2 Vials). USED ONE PACKETS OF EBBEGAARDEN FROM NORSK KVEIK INSTEAD (turned out really good).
Mash at 68C for 40 minutes. Sparge enough to collect roughly 7.5 gallons in your kettle to achieve 6.5 gallons at knockout. Boil for 75 minutes, adding 1.5 oz. Simcoe @ 30 min. After knockout add 1 oz. each Cascade, Apollo, and Simcoe. Whirlpool with pump or by stirring for a minute and letting it spin down and settle. After 30 minutes, reduce wort temperature to 77C and add 1 oz. each Centennial, Simcoe, and Columbus. Whirlpool again. After 15 more minutes begin final cooling process. The goal is to get 5.5 gallons into the fermenter to account for loss of wort during dry hopping.
Pitch healthy dose of yeast @ 18C/65F. After FG has been achieved add a clarifying agent such as polycar. Allow 3 days for clarifying agent to work, then add first set of dry hops to primary fermenter. After 7 days rack beer off dry hops & yeast cake either into a keg or secondary vessel. Try to purge with CO2 if possible. Add second round of dry hops and wait 5 days. Bottle or begin carbonation process. |

Opět velký předělání - místo 5kg Mnichova dávám 10kg Carapilsu. Víc plzně (155->180), méně pale ale (100 ->50) snížil jsem i litry z 1100 na 1000, takže ty slady i pak ručně doupravil.
52° 15->10min, 67°->64° 25->40min, 72° 20->15min
Aroma chmely už nebudu dávat na hořkost, je to vlastně blbost, jen na 5min + WP + DH. A části na 50/30min je taky asi zbytečný, jde mi o aroma a tím vařením se to prostě vyvaří.
Dám jen čistě na hořkost Nugget. Cascade jsem měl na DH Cryo verzi, ale stojí prakticky 3x co T90, tak raději místo kilo cryo dávám 3kg T90. A když už mám 4 kg, tak balení zvlášt na kilovky je 100 navíc, takže další kilo je za 450Kč, což je 15kč na sud, tak beru rovnou 5kg.
Dávám pryč Idaho 7 a přidám Simcoe, ale měl by být celkově v menší míře okolo 20%, pak cca 40-50% Mosaic + 30-40% Cascade
Cascade možná někdy zkusit změnit za Centennial, uvidíme, jak tenhle mix chmelů vyjde.
Nakonec ještě přepočteno na 12hl, abych naplnil tank ve Vikovi (10hl uložen)
Taky jsem zjistil recept na Lollihop!:
- 70% Plzeň, 24% Pale Ale, 6% pšenice
- vystírají do 64°C, kde to drží 75min! (v receptu 60min), 72°C cca 20min pro plnost
- víc do sulfidů, to je jasný, 1:3 poměr, já mám 1:6
- Chmelení cca 10g/l, Citra/Mosaic 50/50 + Nugget na hořkost (v 60min, chmelovar 60min). Aroma chmely jen whirlpool + DH. Já mám 8g/l, mají lehce víc
- Zakváší US05 při 18°, pustí na 20° a po úplném prokvašení teprve DH
IBU 75 je celkem hodně, mám 65, ale těžko přesně dopočítávat ty whirlpooly.
Vaření 11/2024
Celkové předělání receptu, ubrání mnichova a pšenice, Pale ale a plzeňák teď 40/60, vločky pryč. Přidal jsem čas na 52°.
Poměr chmelů taky změněn, víc mosaicu a cascadu, méně Idaho 7.
Letos taky poprvé upravuju vodu, víc do IPA profilu. Čímž bych asi lehce snížil hořkost, teď mám k 60 bez započtení DH, to bych klidně stáhnul k 50 a něco započet z DH tak, abych byl k 55.
Teď si 500g Mosaicu nechám na další recept, kde mi to vychází, ale na příště asi změnit

Všechno dle plánu.
Mosaic na whirlpool jsem dal až ke konci přečerpávání z varny na vířivku po cca 10min (celkově 15min varna + vířivka)
Na vířivce pak 15-20min, pak přečerpávání to tanku dalších dost min, ale už to proporciálně ubývá, počítat na tu kalkulaci hořkosti minimálně 40min.
Mosaic z 2021 neskutečně voněl. Idaho bylo 2020, Cascade 2021, taky voněli hezky, ale ten Mosaic vyčníval (v minulé várce jsem měl 2020, ještě jsem tu 200g měl, který jsem tam na suchý taky hodil, ale nejsou v receptu, ten voněl o něco méně)
Hořkost 55 IBU včetně dlouhýho času u whirlpoolu a přečerpávaní + asi něco dají i ty skoro 4Kg na suchý, odhadem alespoň 59? Jako na etiketu bych napsal 59, ať to nepůsobí tolik, ale reálně bude mít o něco víc (dal jsem nakonec 58)
Sypali jsme slad do cca 700 litrů.
z 52° to šlo na 67° 25min, cca 1,7min/1°C, takže začátek trochu pomalejší, jestli chci tělo, tak příště do 52° sypat a rovnou topit (nakonec to ale prokvasilo na 3,5°P, což je i chuťově úplně akorát)
Vyšlo cca 1150 litrů o 15.9°, na konci jsme to ještě trochu naředili vodou, tak to vyšlo cca 15.7°. Upravil jsem výtěžnost z 77% na 80%, příště dát asi něco mezi, třeba 78%, ten Pale Ale měl asi trochu větší výtěžnost
Stočeno 970l, celkem velký odstřely asi.
Chuťově super, mohlo by to být zase o něco aromatičtější (zkusit příště třeba 1kg na suchý ještě navíc), nicméně i tak voní moc hezky. Tělo je slušný a do sladka, jak jsem chtěl, nicméně na příště bych té sladkosti ubral třeba tak 10-20% (nechat na 52° o pár minut déle?), hořkost výrazná, ale tak akorát bych řekl. |
