Notes: Ran out of roasted barley, subbed a bit of black malt.
Trying no dry hop version. 15.4 brix OG, efficiency way low, perhaps crush? Cooled to 75ish in 30 mins, put in chamber a couple of hours, pitched at 68.
FG 6.9 brix, 1.010. 1 oz columbus cones in keg.
Almost perfect stout, easy drinking, hop forward but not too much. Needs 2-3 weeks minimum to settle and mellow. |

This base beer great by itself but lends itself well to flavoring after fermentation.
Examples:
6 oz of Apple flavoring (1.5 bottles of Brewer's Best)
8 oz of Blueberry flavoring (2 bottles of Brewers best)
1 unsweetened packet of powdered lemonade for a shandy.

Notes: Divide the grain into two equal parts and load one half into the mash tun. Mash in 1.5 qt/lb for a mash temp of 152F. Mash for one hour. Recirculate until wort runs clear and run off the wort. Sparge with just enough hot water to collect 4 gallons of wort.
Heat the wort back up to strike temperature. While that is happening, clean out the mash tun and add the remaining half of the grist. Repeat the mashing procedure and sparge to collect 6 gallons of wort. |

Ferment at 62.
Add fresh watermelon juice after a week or so directly into fermenter (after most of fermentation has completed).
The internets has differing opinions on how much watermelon juice to add. 1qt to 2qts per 5g. A thread on homebrewtalk indicates that 2qts per 5g is the best result.
