Notes: I hit about 149 to 150 on average for the mash temp. I topped off with one liter of water but didn't attempt to take another temp reading. I am assuming it was about 150 on average. Seems like 25lb is about the max for my mashtun. I added a lot of salts this time so we shall see how that all works out. Aged this in a 5 gal balcones whiskey barrel for 4 months. Took runner up Best in Show at the 2014 Bay Area Brew Off which had about 250 entries. |

Notes: My research found that erdinger is made with 2 types of wheat.
And the noble hops Perle, Tettnang, and Hallertau MF. Emphasis on flavoring/aroma low bittering.
Dbl decoction method used . My process is too much to enter steps in mash guidelines. Simplified for other viewers.

Notes: Secondary was performed in the keg at ferm temps. Temp controller cycled heat and cool with a 3 deg delta from 68F thus max swing was theoretically 65-71F. Given this is January I believe it stayed mostly on the lower end (65-68F). Actual (1st brew) OG/FG was 1054 and 1011 respectively for 5.65% ABV. |

Notes:
Style:
Inspired by a Bohemian Pilsner but a style unto its own
Lager is made the world over, but our Premium Lager is a one-of-a-kind gem. In all our years, we still haven’t tasted anything like it. Probably because we fire-brew it to be unique and it’s only made with the best ingredients in a traditional way. So say cheers to a beer that’s as distinct as our town. |
