Notes: Mashed in via two 10g coolers and and 20g mash tun. Cooler sparges got stuck and efficiency was abysmal. Goal was 1.128 OG at 65% eff. but we ended up closer to 50% and OG at 1.100.
After fermentation transferred 15g to a freshly dumped FEW Bourbon Barrel. Aged for ~4 months before transferring out to carboys. Finished beer is very thick and has a high amount of rye spice but not overpowering. Works very well as a blending component or with the addition of adjunct flavoring (coffee, fruit, etc.)
If we made this again we would definitely BIAB or add rice hulls to the mash to avoid sparge issues, I would also dial back the rye by a couple of pounds.
4g of this beer was kegged with 3 oz of whole cracked coffee beans for a couple of weeks.
4g was secondaried on ~3# of raspberries and marion blackberries + an oz of cocoa nibs.
4g was kegged and bottled plain
2g was saved as a blending component for future beers. |

| Notes: Maceración escalonada iniciando a 64 grados durante una hora para luego pasar a 70 grados durante treinta minutos y finalizar con Mash Out a 75 grados durante 15 minutos. Recircular el macerado sobre la cama de grano de ser posible, hasta lograr un líquido limpio. Trasvasar a la Olla de Hervido y encender el fuego. Hervir durante 60 minutos fuerte y vigoroso. | Notes: Doc Brown's Great Scott Ale is a Scottish Style Ale inspired by the legendary Three Floyd's Robert the Bruce Ale. It pours a clear, brown-ruby color and retains a stout like light tan head. Doc Brown has mild milk chocolate, stone, mild fruit, roasted caramel, and mild nutty characteristics. Future versions would work towards improving the chocolate and roasted flavors, a better malt profile and a bit more sweet fruit on the finish. |

| Notes: Brewed 1/24/15. Strike water was about 170 and it cooled to about 153F. I recirculated about 2 gallons and it dropped down to 150F. PH was 5.4 which is right about where it was predicted. In kettle efficiency was 80% which is a bit lower than I expected but probably will be fine. Decided to do a hop stand (0min addition and cooled it quickly) at 180F but it dropped to 170F over the 15min. My efficiency was a bit less than I expected which might have been due to a quicker sparge. I also used more sparge water so possibly that diluted it more. Not sure why it happened this time. Pitching temp leveled out at 68F. 1/25 morning time it was fermenting at sitting at about 64F. Evening time it had risen to 67F so I cooled it a bit. 1/26/15 morning time it had drifted up to 67F so I cooled it a bit. 1/27 was 64F in the morning and it had drifted to about 67F by evening. 1/28 in the evening I took it out of the bath and it was sitting at 68F when I removed it. 2/7 dry hopped and took a gravity reading. 2/12 biofined with 2Tbls. Kegged 2/15 which means I dry hopped for 8 days vs 7. 2/28 I decided to further dry hop the brew in the keg. Also wanted to kick the carbonation up a bit more. |
