| Notes: Doc Brown's Great Scott Ale is a Scottish Style Ale inspired by the legendary Three Floyd's Robert the Bruce Ale. It pours a clear, brown-ruby color and retains a stout like light tan head. Doc Brown has mild milk chocolate, stone, mild fruit, roasted caramel, and mild nutty characteristics. Future versions would work towards improving the chocolate and roasted flavors, a better malt profile and a bit more sweet fruit on the finish. |

Notes: Mash at 154F for 1 hour. For more flavor, add the whole ounce of hops to the kettle as you sparge the mash, so the hops soak the time it takes to come up to a boil and the whole boil of 60min, this is the first wort hop. Otherwise boil for 5 mins, add hops and boil for another 60.
Don't cheat on aeration.
Pitch and set the fermentation at 58F for 7 days, raise to 65F for another week and then move to a sealed keg and leave on basement floor ideally for 2-3 weeks at 48F.
After that chill and check on carbonation level. |

Notes: 6. november 2016, kl 07.30:
Varma opp 22 liter meskevatn til 70°C (4°C over målet), hadde i vatnjustering.
Hadde i malten, rørde godt og let det stå i 15 minutt med lokk på.
Sette so på pumpa og sette temperaturen på 66°C på 600W.
60 minutt totalt.
Heva temperaturen til 74 oC og let stå i 10 minutt.
Skylte på 79°C, ca 13 liter til Max-merket.
Kokte i 60 minutt og tilsette humle, gjærnæring og klaring etter skjema.
Kjølte ned med spiralkjølar og stadig røring til 18°C.
Whirlpoola med ausa, let stå i 15 minutt.
Tømte over i Speidel gjæringsfatet og tilsette oksygen og gjær.
OG 1.051
Sette Bitteren i kjellarstova på 20°C.
Temperturen steig jamt, etter 10 dagar 22°C.

FG: 1.010, sette ut karet på 4 oC
20. november:
Sette 18, 5 liter på fat og til karbonering med CO2 på 1 Bar i kjøleskap på 4 oC.
Det vart 2 flasker ekstra som eg karbonerte med 2 sukkerdrops kvar.
Til modning i kjellarstova på 20 oC.

Do not add the candi syrup at the boil. Instead, add 1 lb. 24 hours after pitching, and the final 1 lb. 48 hours after pitching. This will insure that the yeast is not overloaded and will reduce "hot" alcohol flavors.

Kegged last week, tasted great already, the hops were present and pairing well with the blueberry but slightly subdued so I added another 3oz mosaic dry hop to the keg to even it out at 1lb total mosaic. Having a full pint tonight, its money.

opened today for gravity reading and to add dry hop. 1.018. smells great. tastes great. not as darkly colored as previous blueberry beer but its like a hazy pink on its way to purple. tastes great, a little harsh bitter note, could be the mosaic? there is no bittering hops in this brew.
should be good! should be ready soon! will leave it to dry hop for 3 days then take out the bag, take another gravity reading to make sure the fruit has fermented out / no further activity. after that will need to cold crash for a day or two then keg. possibly add another 2nd dry hop to the keg. i have a few oz left of the bag.

initial recipe formulation
copying base recipe from mango maya. keeping basically the entire grain bill, adjusting efficiency to 60, removing DME and adjusting base malt to get to 8%. im hoping to cook the oats and get better efficiency than in the past. if we end up with 6% it should still be tasty.
axing the 1lb honey malt - i dont think it plays as well with blueberry as it does with mango. also its heavy on lovibond making th ebase beer more orange colored which goes ok with mango but for blueberry im hoping more toward yellow hazy ipa base beer as a bright backdrop for the purple blueberries.
making up a new hop schedule, 100% mosaic. not sure how much to use. starting with 13oz - about the same as mango maya. will probably buy a bag so if it needs 3oz more in a 2nd dry hop, that will be available.
decided on only 3lb blueberry - last time i used blueberry i did 6lbs and it was way too much. i think it will not be lacking in blueberry color and flavor, especially accented by the mosaic.
could maybe do without the vanilla bean? and lactose? prob not. |
