Notes: 2024-05 Have made this a few times. I find that my efficiency was too good so it was coming out near 7% so I cut 1 lb of 2 row to get it nearer to 6.
2022ish Made this from a kit the first time. All grain was amazing. Second time was from extract kit I ordered by accident. The extract version came out significantly more malty and dark, but I hadn't done an extract batch since the first time I brewed (ever).
This time I didn't have Crystal 40, but I did have Fawcett Crystal I (45ºL, medium crystal at NB) and my Centennial was 8.7 not 11.1 AA, adding some more at bittering to get to about 45 IBU Rager.
As a side note, I find that centennial clogs up poppets and racking arms more than any other hop once hydrated. I recommend a filter of some sort and a larger one at that. |

adding the simple sugar to fermentor not during the boil but a couple days into fermentation. will probably dissolve in a little water.
meanwhile trying to hit the official hardywood singel stats : OG 1.056 ABV 6.2 SRM 4 IBU 30. I sense a little woodey or piney something in the beer so im adding a little more hops plus a flameout addition. adding decent amount of light crystal malt to try to achieve a little sweetness without sacrificing the color. probably gonna mash at 150 but try to stay on the cool side.
there is a kind of sour taste to the beer too so im not sure how to achieve that, but likely through yeast selection. still looking at yeasts...would oberon yeast be a candidate?
ogg tony suggests White Labs wlp500
aa on hallertau hersbuckler in this app was way different than german hallertau from the store so i bought too little hops. substituting east kent goldings a little in the bittering addition.
planning to add the sugar to minimal water (pint or two) bring to boil and boil down as much as possible. chill then add to fermentor on day 4 or 5. |

Admiral Whitbeard, known for his love for ale, was dining with the Royal Family and speaking of a secret development in wonderful floral hop aromas through dry hopping. The intrigued Royal Family financed a voyage sending Admiral Whitbeard east though the Mediterranean in search of a hop that would enchant even the very nemesis of beer lovers. Along his way he was seduced by Calypso. like many of seafarer before, he fell into the nymphs trap, was swindled into acts of barratry, and destroyed the ship under her spell. The King of England came to know of this and funded for a search and rescue in coordination with the royal navy. Strike water at 165.1 with grains at 70 to achieve 152 content in mash.
Begin recirculating at 55 min in mash. Continue for 20 minutes. Then commence sparge.

Ver.1 (4/15): Increase 1 degree per day starting at day 4 (bulk of Fermentation complete) to 71F for rest. 14 Brix post boil (supposed to be 15.5 Brix, 1.012 final gravity.
Tasted great, adjusted for 65% efficiency. Added some cacl and b soda, no ph adjustment.. 4 months aged in bottle-Won FCC Gold for Porter!!
