Notes: Another split batch: 5 gallons with T-58 and dry-hopped with 2 oz saaz; and 5 gallons with S-05 and dry-hopped with 2 oz of cascade.
Oats are toasted.
Brew Day Complete: Somehow ended up with more beer at a higher OG than planned. Efficiency up to 87% from 73% normally. First brewday since June - went very smoothly. Was trying for a mash temp of 156F to maintain some body in what was supposed to be a very low alcohol beer. Hit 152F but with a higher OG so maybe that will be ok. Will double the dry hop to 2 oz from the original 1 oz.
Day after brewing, T-58 has kicked in, S-05 has not. Sat on all ingredients for a month or more so am a little worried about viability. However, the T-58 was the yeast with the past best-by date.
Took a Refractometer reading 11/14 and got 5.1 for the S-05 and 6.3 for the T-58. The T-58 seems to be still working a little. Using the Brewer's Friend calculator that puts them at over 6% ABV. A little stronger than I originally planned, but that's ok. The small samples I pulled make me very optimistic these will both be great and quite different from each other. I am letting them ride for a couple more days but will keg on 11/19 at the latest to be ready to tap for Thanksgiving. |

DIRECTIONS
Mill the grains and mash at 144°F (62°C) for 45 minutes; raise to 154°F (68°C) and rest 15 minutes; then raise to 162°F (72°F), rest 15 minutes, and mash out. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 90 minutes, adding hops according to the schedule. After the boil, do a whirlpool step: Stir or recirculate to create a vortex, then allow 20 minutes to settle. Chill to 50°F (10°C), aerate the wort, and pitch the yeast. Ferment at 50°F (10°C) for 10 days to clear diacetyl. Crash to 32°F (0°C), package, and carbonate to 2.5–2.6 volumes of CO2.

This is an IBU kicked version of the first of this namesake. Lower SRM, less crystal to dry it up a little and higher IBU. :)
Still a 60 min boil, but no hop addition till 30 min. Takes a little more hops to get the IBU youre after but preserves more hop flavor. Been experimenting last few batches like this. I like the result.

This hop variety is available to the public for the very first time ever! Everyone at YVH was so excited when it arrived that we tore it open and breathed deep. The aroma is alive with tropical fruits and citrus, but pluots, peaches, and plums seem to be the big descriptors. We made both hot and cold teas and found that the hot tea leaned more towards a grapefruit aroma while the cold tea had darker fruits like plums and blueberries. I think we are going to try brewing a hoppy Saison with it and try to emphasize the stone fruit flavors.

this brew came out fantastic! couple execution items to clean up - didnt seem to clear out fully, and 2nd half of the keg had faint oxidation.
the hop combo was really nice, mosaic dominated and there was no bittering. next time consider going 2/3 centennial 1/3 mosaic

decided to go with corn instead of rice. adjusted the water profile. its a little high on calcium but should be locked in to the 1:2 cl to so profile adjusted from tap water.
thinking about mash hopping?? maybe not for this since lager yeast

i think i have the malt bill down, 80-20 pils to rice. would like to understand the difference between using flaked rice vs minute rice (any flavor difference? any price difference?) and also between flaked rice and flaked corn (flavor difference?)
also need to figure out water, im guessing i can use my west coast ipa profile
also need a plan for hops. what bitterness we aiming for. going fruity/juicy? or classic american hops?
will go with 34/70 at 68 degrees
