Notes: Modified version of a Spotted Cow clone recipe. I'm not a big fan of the cream ale style so was looking for something established that I might actually enjoy drinking. Or someone will.

pitch 1600 ml starter at 68 degrees
Mash in the 152 to 154 range for a bit of body. You do not want the beer to thin.
I've made this brew 6 times. Last batch was Mar 6 2014. If you have ever tried this brew from wisconsin, (New Glarus) brewery this recipe comes close to what Spotted Cow is all about. They claim it is a Farmhouse Ale but do not use Saison yeast.
After extensive research this is what I came up with for a recipe.The are secretive about the yeast they use, but the consensus is, it is a Kolsch yeast either Wyeast 2565 or WLP 029 and I think it is 029. My preference is 2565. Wyeast 2565 is my house yeast.
Ferment at 58-60 degrees with Wyeast 2565 or 62-65 with WLP 029
I've had good compliments on this brew from others. I live on the Wisconsin border and they don't sell it in Illinois, for some reason they will not ship it to this state. Will update as needed but for now this recipe is a pretty solid clone.
I made 11 gals (2 batches) in march 2014 I cant keep it in the house fast enough. SWMBO and her friends love it. With the temps soaring in Chicago this is a great brew for summer.From kettle to glass is about 5 weeks so turnover is quick. Good luck if you try it, shouldn't be disappointed.
Made batch 7 (5 gal) on 6-14-14 and used Mt. Hood for flavoring (.5) and aroma (.5) I think the domestic hops are closer to the original flavor. -enjoy-
Made batch #8 2-28-2015 no changes should be ready to drink mid April

Notes: 2024-03-16 Last batch was nice. Got some feedback from stormcrow. We missed the carbonation on it massively when canning so that will be better next time. Also, it was "a lot roastier" than when they make it so changing some of the process. Adding the milled dark malts super late in the mash and putting in less. I needed to change the 0.5 lbs of Carafa I to Carafa II so that goes down to 0.25 and I'm using 1 oz less black prinz (4 to 3).
Been a year, making this again after having lived on czech dark lager. Editing the original recipe a little bit to include the fact that the dark malts are only added in the mash right before the bag is pulled. Getting the color out and only a small amount of roast. This was originally done, but wasn't reflected in the recipe. Also adjusted the acid slightly up to keep the mash pH below 5.4 as the dark malts would not participate in the enzymatic rest and not contribute the pH there.
Original malts were Sugarfoot Sue (Vienna) and Whisper Sister (Pilsner) from Gateway Malting, https://gatewaymalt.com/

Gonna give OYL-044 a try. Supposed to be like WLP-029... we'll see.
Didn't have black malt, got black prinz, same Lovibond
didn't see Dark Chocolate, got briess chocolate.

Notes: Modified version of Rogue Chocolate Stout. Increased IBUs to be closer to the actual beer as the Zymurgy recipe incorrectly only has 40IBUs. Color was also very light, so increased roasted grains. The actual beer is 135L, so this is still pretty far off in color, but was shooting for a lighter / more chocolatey flavor. Added cocoa nibs to the end of the boil, need to determine if they are best served added to the secondary or to the end of boil. Chocolate extract is used in secondary to give strong chocolate aroma/flavor. I'm not sure about vanilla use, perhaps only a hint would be nice, but I may need to adjust to not overpower the beer. There is no vanilla in Rogue.
Decided to drop vanilla. Flavor seems perfect - similar in some ways to Rogue, but much more silky/chocolatey along the lines of Shake, but not sweet like that beer. I'm really happy with this recipe! |
