Notes: very disappointing brewing efficiency on that specific day. ended up with a much weaker wort and down-sized the total boil / fermenter volume to remain within style limits. primary @ 19 c for 2 week, racked to keg with 90g corn sugar and lagered for 3 weeks @ 19 c. cold crash @ 2 C. pleasant carbonation, light tanned thick head with good retention. very malty balanced with a fresh aroma and bitterness (did not adjust hop addition to new volume). very pleased with the result |

Notes: Used whole leaf Amarilo hops in boil. OG was low 1.055 vs 1.078?? Added water to mash due to temperature was 148 vs 152. Reduced Sparge water to compensate. Collected about 5.5-6 gallons wert.
Dry hopped on 2/26/12 with a total of 2.23 oz of Citra/Centenial/Columbus/Amarilo hops and left it in primary due to travel. Some activity still present.
Kegged on 3/7/2012 - Great hop citrus aroma and taste. nice body and sweetness of a red ale. There was about half to 3/4 of a gallon extra left after filling 5 gal keg. |

Basic cinnamon extract recipe -
2 sticks cinnamon, roughly cracked
4 oz Vodka
Soak cinnamon in vodka, shake routinely for ~ a week, strain and add to taste
Chris Moon brought a sample of his Yorkshire version with a full 4 oz of cinnamon extract on the 2012 LA Brewery Bus Trip and it was amazing. A little sweet, but dead on in taste like an Oatmeal Raisin Cookie!
The raisins in the boil may have been the source of a haze that stuck around for the life of the beer, but overall the beer was a real winner and needs just a little extra tweaking to be truly awesome. |
