Notes: This is not a Scottish ale. I know that. This is a clone of a beer made by Bert Grant in Yakima, WA, in the 80s-90s. He’s the one who called it a, “Scottish Ale.” His reasoning, when pressed was, “I originally named it ‘Scottish’ because I was born in Scotland—that’s all, plain and simple” (Grant, The Ale Master, pg 81). …. So there’s that.
I’m using a Kveik yeast because I don’t have temp control and my garage gets hot. He originally calls for a British ale yeast in his book, and then later for a Scottish ale yeast, so take your pick. |

Notes: Fermented in a pressure vessel ( Fermzilla Allrounder 30L ) @ 20 PSI and 26 C. Fermentation completed in 3 days.
Well rounded flavour profile, fairly dry with malty flavours offsetting the bittering. Very clean tasting with very little in the way of esters. Toffee notes with very pleasant bittering after-taste.
The end result was a little darker than it was supposed to be so next time I would use a lighter crystal malt. |

Notes: # British Hop Pale Ale
Easy drinking English Pale Ale. Made with Crisp Clear Choice base malt, light Crystal and Dextrin malt to give a honey, bready malt base. This beer has a lot of hops in it; the Target hops used for bittering will give a strong bitterness and the British grown cascade makes up the late kettle hops for aroma. To add to this, a small amount of GP75 and Earnest are added as dry hops to give a peach and apricot flavour to the beer. An easy drinking beer for the summer. |

Notes: Use Potassium Metabisulfite at rate of 1/8 tsp per 10 gallons of water.
Second addition of lactic is for sparge water to lower pH to 5.4
Make vitality starter (1.040 wort at pitching temp and spin on stir plate for duration of brew day)
Pitch WLP036 at 62F and maintain throughout primary fermentation.
