Kit was given to me to brew, featuring a 9-month old grain crush. BRY-97 yeast was expired, so I'm using my slurry Conan on this.
3, 1oz bags of Simcoe included of unknown storage quality these last 9 months will be used.
Pilsen DME is getting thrown into this recipe because I have an partial bag lying around to get rid of. QP of honey malt same way.
Therefore, I'm going to boil a smaller volume of over-all water (7 gal vs 7.6 gal), increase boil time to 75 minutes (+15 from 60) and then top up to 1.046 not knowing how well the 2-row converts overall. |

Notes: Brewing on Brewer's Edge Mash & Boil
1. Started with 4 gallons of distilled water and added all salts listed to Mash - heated to 167F and hit mash temp perfectly on mash in
2. Mashed normally for 60 mins with a brief recirc using a pump at 30 mins.
PH - 5.2
3. Mashed out at 170 for 10 mins then sparged with room temp jugs of RO - ~3.75 gallons
4. Boiled and followed hop schedule and whirlpool.
5. Cooled and transferred to fermenter. Set in chamber and cooled to 66 to pitch decanted 1318 starter
6. Fermentation activity in a few hours. Dry hopped day 3 then let ferment for 10 days before crash cooling with co2 filled balloons on the blowoff. Took about 1-2 fills/day
7. Closed transferred to keg with loose dry hop 2 in it. Used a clear beer draught system. Let the beer sit at room temp for 24 hours.
8. Put on co2 at 2.3 lbs

Notes: This will be my first batch out of my Grainfather Connect. Not sure if my efficiency it too low or too high. Will evaluate after the final gravity. Should be interesting hence I have never used this system before. Plus no secondary because of the conical Grainfather Fermenter that allows be to dump the trubb from the bottom.
With research done, my hops are added 25% hot and 75% cold.
Also, shooting for a bit lower mash temp from research I did with higher ABV.
First time out of the grainfather had a couple hiccups. still happy with what I produced so far. I tried the wort after 7 days and it tasted absolutely perfect. I did yield more than I thought obv because the lack of experience with the grainfather. yielded 7 gal, took gravity on day 8 and was surprising on point to hit my mark. will take again in 7 days. dropped the fruits and hops.. i am changing the recipe as i go on the hop bill. honestly even though the random changes i can not wait to keg this beer! |

Notes: This is a pilsner based American IPA that uses no hop additions in the boil. Instead, hops are added during the mash, first-wort, flame-out, and in the fermentor for dry hopping. Carapils and brumalt add a honey-like sweetness and oats enhance the mouthfeel.
Ignore the whacky IBU estimate shown below, brewprint doesn't know how to handle non-boil additions. This recipe should be around 55-60 IBUs, as indicated in the Target Metrics above. The numbers and schedule are as follows:

Notes: Mash Schedule:
*Dough in to start the mash at 52°C
*Leave for 10 minutes
*Remove approximately 30% of the mash and put in a large saucepan
*Add 30g of Styrian Golding hops
*Heat to 60°C and hold for 1-2 minutes
*Bring to a boil and leave for 20 minutes
*Return the boiled decoction to the main mash and stir
*Mash temp should now be 63°C (approx)
*Leave for 45 minutes
*Sparge with near boiling water (95°C)to collect 27lts in the boiler
*Adjust wort pH in the boiler using 80% Lactic Acid, before heating, to a pH of 4.4
*Heat until bubbles appear
*Chill to 20°C
*Pitch yeast and house culture

The idea of brewing this again is due to the fact I won second place with the previous incarnation. I now need to see if I can produce the same or a very similar beer.
The house blend has been added to so I am pretty sure that the profile of the final beer will change even though I am doing everything to do with malt, hops and brewing yeast the same as before.
