Marshall Bishop of trinitybrewers.com is known in the homebrewing world for his painstaking journey trying to recreate Treehouse Brewing’s famous Julius IPA. Marshall spent a year exploring different yeast combinations, grains, and hop combos in an effort to get as close to the real thing as possible.
Day 1 – S-04/T-58/WB-06: 92%/5%/3% – pitch all day 1 at regular pitching temp 72º
Day 2 – Reduce temperature to 64º
Day 8 – Raise temp to 70º and dry hop
Day 10 – Cold crash for 2 days and keg or bottle

Notes: Mash at a fairly low temperature, 148° F to allow for the drier style. 60 minute boil with the addition of 1 ounce of dried juniper berries with the 1/3 ounce of Azacca hops. The remaining hops are added at flame out.
Chill the wort to no less than 85° F. Under pitch the Omega brands Kveik yeast and maintain the temperature throughout the whole fermentation. This hot fermentation will allow for the yeast to produce esters of pineapple, mango and other citrus from being stressed and under pitched.
The beer can then be chilled and kegs in only 10 days! |

Notes: 1. Line the 7.5 gallon kettle with mesh grain bag, fill with 2.1 gallons tap water and bring to 159°F. Remove from heat.
2. Mash-in by slowly adding Pilsner and wheat malt into the bag. Stir for 2 minutes to prevent grain from clumping together. The temperature should equalize to about 149°F
3. Remove 3 quarts of the mash for the decoction, including a good mixture of both the grain and liquid. Add the Hallertauer hops to mixture and boil in a separate pot for 15 minutes. Stir frequently, and as foam rises to the top, skim and discard.
4. Add the entire decoction back into the mash. In a separate container, heat 3.7 gallons of water to 185°F.
5. After about 60 total minutes of mashing, mash-out by carefully pouring the 185°F water into the mash, stirring to equalize temperature to about 170°F.
6. Slowly raise grain bag out of the liquid, allowing wort to drain from the grain. Hold grain bag above the kettle for 5 to 10 minutes as the wort drains.
7. DO NOT BOIL. Cool the wort to under 80°F and transfer to a sanitized fermentation vessel.
8. Use a sanitized auto-siphon racking cane to remove enough wort to take a gravity reading with your hydrometer. Make a note of this number, since you will be using it to calculate the actual alcohol content when it's done fermenting. The reading should be around 1.035. Cover fermentor with a sanitized stopper and airlock.
9. Add 1 package of Safale US-05 and 2 packages of Lactobacillus. Ferment for 3 to 5 days at a temperature around 75°F.
10. Condition by allowing the beer to rest for at least a month. Taste samples weekly to determine sour flavor development.
11. Bottle when desired level of sourness and flavor have developed, up to 6 months, using enough priming sugar for a high level of carbonation. |

Notes: Lower ABV clone of Alaska Brown Ale
Key notes: Make a normal brown ale and add decaffeinated cold brew while kegging or bottling. Cold brew works better at serving temperatures as it will not separate. Adding right before packaging ensures you get a mild coffee flavor.

Set-up Notes: Made yeast starter. Standard three vessel brew setup.
Mash: Targeted 60 min steep at 154 F. Preheated cooler mash tun and added water at 154F. 1qt/oz grain. Sparge with 170 F water for 40-60 minutes.
Boil: Very easy and quick to get to temp with burner and maintain. Stirred in hops (in muslin bag) just before the break to ensure even heat distribution. 60 minutes for boil. Added aroma hops (in muslin bag) at 45 minutes and stirred. Added orange peel slices at 55 minutes and stirred. At 60 minutes, I used tongs to remove hops. Shut off heat, covered with lid to move indoors, put in sink ice bath, removed lid. Orange peel slices will remain through primary fermentation.
Evaporated liquid: ~1 gal
Cooling: Took ~60 minutes
Primary: ~3 weeks at 73 F. With English ale yeast you should give it a slight swirl every week because of how fast it floculates.
Secondary: 1 week
Keg: Add cold brew first before siphoning. Cool to serving temp and carbonate. |
