Notes: Water chemistry is achieved with addition of 1g Epsom Salt, 1g Table Salt, non-iodized, and, 3g Calcium Chloride to 8 gal of distilled water in the strike.
Two step mash, first portion target temperature is 144F, held for 45 mins, then raise to 163F for a further 30 mins.
Add to fermenter through strainer, adjust gravity to target by adding distilled water, after addition of 2L yeast starter. |

Bring H2O to 123 - Add grains
Bring to 143 - Hold for 10 min
Bring to 152 - Hold for 60 min
Bring to 168 - Hold for 10 min
Pull Grains - Add .5 Warrior hops
Bring up to boil and go for 60 minutes
Heat off Whirlpool
At 200 of Flame Out add 1oz Pearle+ 1oz Tettnanger
At 170 Hold Temp for 10 minand add 2oz Pearle+1oz Tettnanger
- Pitch yeast at 70 and cool to 52
- Ferment at 52 deg
- Re-rack and keep at 52 deg
- Close to or at F.G. conduct Dycetyl rest
Slowly bring up to 67 deg over 3+ days. Hold for 48-60 hours.
- Slow crash to 32 deg
- Keep at 35 deg for at least 30 days.
