Notes: Mashing Instructions:
“Simplified” Version of Cantillion Turbid Mash
Heat 6 gal of water to 140 degrees. Shoot for a strike temperature of 113F after doughing in. Rest for 10 minutes.
Add approx. 10 gal of boiling water over 5 minutes. Stir all the time. Stop when you reach 136F degrees. Your mash will be very soupy.
Remove 2 gal of soupy liquid from the mash tun and heat in a 2nd kettle to 176F degrees. Keep it there for now.
Add up to 12 more gallons of boiling water to main mash tun until it gets up to 150F degrees. It will be even soupier now. No rest needed here.
Transfer another 10 gallons from mash tun to 2nd kettle. Try and maintain temperature of 176F. The main mash will be resting at this time.
Add up to another 12 gallons of boiling water to bring mash tun to 162F degrees. Let it rest 15 minutes. It will be very thin.
Run off as much liquid as you can from mash tun into boil kettle and start boil.
Transfer enough liquid from the 2nd kettle to the mash tun to get to 167F degrees. Rest for another 15 minutes. Any remaining liquid in the 2nd kettle should be added to the boil kettle.
5 minutes into the rest in step 8, start recirculating the wort to “clarify” it. Sparge with 180 degree water until gravity falls to 1.005. You will be collecting more than 40 gallons.
Boil for somewhere from 2-4 hours until your gravity climbs up to at least 1.050.
Yeast:
Pitch with White Labs 570 (Golden Ale yeast). Fairly neutral for a Belgian. Ferment in the high 60's.
In 2 months, pitch Pediococcus Damnosus. Ferment in the 70's or 80's.
In 4 months, pitch Bret. Lambicus and Bret. Bruxellenis Ferment in the 70's or 80's/
Add fruit or additional wort if desired at 2 month mark. You can add to an oak barrel, but that barrel will never be available for any non-sour beer in the future.
Plan on aging a minimum of one year. Three years are better. |

BrewDog vs Amundsen. One of a series of collaborations with European craft breweries, aimed at promoting engagement and market growth. With Norwegian craft brewers Amundsen, we are creating a mash-up of two existing beers, resulting in a coffee, chocolate and marshmallow Russian Imperial Stout. If your mash run off takes a long time, increase the temperature of your sparge water to keep the mash bed warm and permeable.

Notes: - Brewed on 11/10/18
- Heated strike water to 164F, doughed in and quickly settled at 153F mash temp
- Expecting mash efficiency of 76% which implies a pre boil gravity of 1.053. Took many samples inside which ranged from 12.7 to 13.1 (but hit 13.1 multiple times).
- Added brewing salts and lactic acid to the strike water prior to doughing-in
- Initial PH was X.X vs. 5.41 expected. PH meter still not calibrated correctly. So assuming expected mash PH was reached.
- Put honey into brew kettle at 130-140 degrees. Expecting honey to add ~4 gravity points so 1.057 then expecting boil to reduce down to 1.074 original gravity. Used 1 pound instead of 1.5 because I thought I was at 1.055 before honey addition instead of 1.053 expected and the 1 pound still added 4 points so 1.059. Turns out was only at 1.053 so prolly added 3 points getting me to 1.056.
- Ginger goes in at 60 minutes during the boil (in hop spider)
- Cinnamon goes in at 60 minutes during the boil (in hop spider)
- Original gravity was 16.2 plato which converts to 1.066. 10.75 gallons was left in the kettle after boil. 10.5 made it into fermenters. Expected the boil off to contribute more points. Something with the numbers when wrong and not sure where. Took multiple readings for OG and it consistently was ~16 plato. **Figured it out. Boil off and gravity point contributions vary depending on wort volumes. I based my assumptions off 5 gallon batches for this 10 gallon batch. Should have targeted a higher pre boil gravity (~1.064 to try and hit 1.074 original gravity).
- Packaged on 11/25. FG was 1.014 at 69F, which converts to 1.015 which implies 75% attenuation (which is what I expected) vs. 69% avg attenuation for the yeast.
- This beer scored a 39.5 and finished second in its category in the Square Kegs Winterbrew 2019 competition.

15.3.17
Malt bill mix of #1 and #4 (4% Carafa II and 10% Brown). Rest of recipe the same as #1-#4.
Initial Mash Ph = 6.5 (optimal 5.2-5.5)
30min/final Mash Ph = 5.8 (still too high)
Preboil gravity = 12.8P (slightly higher than #1-#4)
Original gravity = 14.5P (higher than #1-#4)
20.3.17
Ph 4.27, temp 19.5°C
--- P4#4
Now we're changing up the malt bill quite a bit; No cara malt and using 50% brownmalt together with 50% pale ale malt. The rest is identical and aiming for similar degrees of plato; 13°P. Expected color is very dark since we're using 50% of the roasted malt, however it is very lightly roasted, only about 65 Lovibond (Carafa ~400 and Chocolate ~300).
Mash Ph = 6.0 (higher than optimal 5.2-5.5)
Gravity preboil 11.5°P (lower than #1 - #3)
Gravity post boil 13.5°P
Post boil volume 18.5L
Final volume in fermenter 16L
Final gravity 3.7P (after 7 days, higher than #1-#3)
Final pH 4.34
-- P4#3
Same recipe as P4#1 with BEST Chocolate instead of Carafa II
BEST Chocolate grined finer than rest
Firstwort hopping. New package of Columbus opened, different from #1 and #2. 9g old (16.3% alpha), 6g new (14.1% alpha)
Removed 0.5L in the beginning of boil for yeast hydration. Maybe some hops were also removed.
Preboil: 12.4P (slightly higher than #1 and #2)
Beer appears dark brown. Nice color.
Underpitched with dry yeast: 0.45M/ml/P (1 package, 11g)
Postboil: 14.2P (higher than #1 and #2)
Final Ph before fermentation about 5.2
Final volume in fermenter 15.5L
Final gravity 2-2.5°P.
-- P4#2
Same recipe as P4#1 with Carafa III Special instead of Carafa II
Garafa III grined finer than rest
Firstwort hopping (removed 0.5L before boil for yeast dehydration. Removing during boil means removing some hops. Wort was boiled separately).
Preboil: 21.5l 12ºP
Beer apears almost black. Darker than #1. More than expected
Underpitched with dry yeast: 0.45M/ml/P (1 package, 11g)
Postboil: 18.5lit. 13ºP
Final volume in fermenter 16L
-- P4 #1
Carafa II grind finer than CaraMunich & Pale Ale.
Firstwort hopping
Preboil: 22lit. 12ºP
Beer appears to be darker than recipe.
Postboil: 19lit. 13ºP
Bitterness: slightly above average (3.5/5bitterness)
Color: Dark, almost black
Underpitched with dry yeast: 0.45M/ml/P
Final Gravity: about 2.5ºP (picture) -> 5.7%
End of fermentation: Very light in aroma and a smooth bitterness (3/5biterness) |
