Notes: Using a single decoction, calculate the amount of the mash that will need to be heated with a mash in at 122 °F (50 °C). After 10 minutes, transfer the calculated amount of the mash to a separate pot. Heat the pot and constantly stir until boiling. Return the boiled mash to the mash tun and mix with the remaining grain to bring the temperature to 150 °F (66 °C). Allow the mash to rest at 150 °F (66 °C) for 60 minutes. After fermentation, cold condition the beer for three weeks.
To make the eisbock, use 2-liter plastic soda bottles to freeze the doppelbock. Avoid glass to prevent shattering from expanding ice. Just before the beer freezes solid, pour off the beer into another vessel leaving behind the ice crystals in the bottle. When the sides are pressed, there should be some give but the contents should not still be slushy.
Start with approximately 3 gallons (11.36 L) of doppelbock and finish with 1 gallon (3.79 L) of eisbock. |

Notes: 23L ro water split into:
16L ro water + 5L tap water for mash
7L ro water + 2L tap water for batch sparge
Additional water for dilution after boil:
3L tap water
My tap water has kind of a balanced profile.
Mash for 1 hr @ 66c, adjust ph with lactic acid if needed
Mash out @ 78c for 10 min
Drain mash, add the 9L sparge water @ 78c and wait 10 min, drain again into boil kettle.
Volume +/- 25L
Boil 60 min
Add hops as scheduled
Add the sugar and syrup at 15 min to go.
Volume should be about 21L after boil including hop/protein loss, sg of 1.092, add 3L of tap water to get to sg of 1.082.
Temp at pitching yeast 17c, keep cool for 24 before letting free rise

Notes: Late addition for candi sugar (approx 10 min left in boil). If using hard candi drop in slowly to allow for melting otherwise there will be a big chunk left in the bottom of the pot after cooling. The yeast will eat it either way during fermentation.

Notes: Much of the beer's unique flavor does come from Special B which gives a nice caramelized fruit character to the brew and the lactose helps keep the mouthfeel thick even with the brown sugar which, through fermentation, could potentially add dryness to the beer. Other malts we use in it include crystal 40L and english brown malt. I think one key ingredient that we use though is the yeast. We have two "house" yeast here, 01 Cali yeast and 28 scottish yeast and we use the later on cold crash. 28 adds a nice subtle ester and slight musky character to the beer and I think it helps complement the other notes from the specialty malts and adjuncts. Our hops don't play a huge character in the brew but if you are dying to know what they are, it's bittered with CTZ and has Palisade later on but they really are there mostly for balancing. |
