9/30/2019 brew day
there was snafu with ingredients. i had the homebrew shop pick my order last week. one bag was supposed to have 2lb oat malt and 2lb wheat malt. as far as i can tell it was just 4lb of flaked oats. so i just used 2lb of that flaked oat, then i had a bag of 1lb wheat malt and 40L (wouldve preferred not to use the 40L but it was mixed) so i added that and another lb of 2row.
Also for simplicity i scratched the existing spice bill and just did 2.5 tsp pumpkin pie spice. (using charlie papazian pumpkin recipe as reference for the approximate spice amount)

Based on the award winning mango maya recipe. Considering coconut!? Bumped it down from 8 to 4oz. taking the hop schedule and pumpkin and spice amounts from 2017's pumpkin single 2. (pumpkin single 1 used brown sugar which is counterproductive in this milkshake beer) changed 2row back to pilsner. color estimator looks pretty orange but considering adding some crystal malt? biscuit malt has highest lovibond from original recipe.... |

Notes: * Dissolve the DME 1.5 lbs at a time in 2 qts warm (105-120f) D.I. water.
* Then mix with remaining water to come up to 14qts incluing vol increase from DME. ( 12.6 qts with 4.5 lbs DME results in 14 qts pre-boil)
* Could do this the night before and store cold.
* Add 1/2 tsp Gypsum and Sugar and nutrient
* Bring to boil
* Set timer for 20 min
* Add 10 drops simethicone
* Add 1 oz Summit hops @ 20 min
* Add immersion chiller to sanitize, check and tighten
connections.
* 2 oz Cashmere @10 min
* Turn off flame
* Cover with foil and chill
* Transfer to fermenter
* Moveto chamber and set to about 75F (actual wort temp will continue to go down about 5 degrees lower)
* Oxygen and Yeast (US-05)
* Take a mason jar of wort and inoculate with yeast for fast ferment test.
* Set chamber to 68 (66-68 actual).
* Dry Hop with 2oz Cashmere for 3 days once activity
ceases. |

Notes: Original recipe uses 1 oz cascade @ 60 min instead of chinook. Chinook was added because I have a stockpile of it and it's only a bittering addition.
I thought my efficiency was wayyyy too high. It ended up being that I don't know how to use my new refractometer :( Added more hops to balance the (what I thought would be) high alcohol. This is an IPA now!

Notes: Yeast starter, 38 billion cells (use Yeast Pitch Rate and Starter Calculator to estimate). Pitch yeast at 18 C and allow it to rise 3-4 degrees every day over the course of the next 3-4 days until you stabilize temperature around 32 C. If beer refuses to drop close to or below 1.008-1.010 within 2 weeks, pitch Wyeast 3711 French Saison yeast to finish out.
Hop bill: Add flameout (1 min) hop addition, take it off the heat, and let it rest for 20 minutes before starting cooling. Dry hop can be done either in one or two portions of 5 days each, with the same hop amount. Mash hops (Czech Saaz or German Tettnang/Hallertau) are added directly to the mash, or as first-wort hops, directly in the boil kettle while transferring from the lauter tun to the boil kettle, before beginning the boil. The latter option will give around 5 more IBUs, and whether or not to do it depends on if you want a slightly more bitter beer or not.
If you're feeling adventurous, you can take part of (or the whole) batch and add a New Zealand white wine during secondary fermentation, as an experiment. Let it ferment out and add priming sugar like normal. I think this will work well, but who knows? It's been done with great success at places like moderntimesbeer.com, so maybe worth a try.
