Notes: Color and Toffee/Caramel flavor should come from combination of Munich and choice of Crystal/Cara malts. CaraRed would be a great choice as would a combination of Crystal 20/40 and Victory or Biscuit. RedX might substitute for all or part of the Munich but the flavor combination of RedX may not be as pleasant as Munich.
Roasted Barley or similar should be used sparingly so as to make a contribution to the color without adding too much roasty flavor.
Use of Acidulated malt for PH management is optional.
Water chemistry additions should be made to target a fairly balanced profile that leans towards a malty lager but utilizes enough gypsum to make the hop flavor hold up well.
Step mash is routine for me but a single infusion of 152 would probably do very well.
Yeast choice could be S-04, Nottingham, WLP-004 or similar liquid Irish Ale yeast. |

Something Hoppy is just that a hoppy IPA, lower in alcohol than our average IPA but loaded
with some somewhat new and exciting hops. Think Tropical, Citra, lemon candy.
The recipe was provided by the brewery with a target ABV of 5.9%. Note the Grainfather mash efficiency necessary to meet this target with the provided grain bill. Adjust the grain bill as necessary for your equipment.
Additional notes from the brewer:
1. Target water profile sulphate to chloride ratio is ~1:2.
2. Target mash pH is 5.3.
3. Mash at 69C.
4. Target bitterness is ~40 IBUs.
5. Use American Ale yeast.
6. Dry hop for 3 days 90% of the way through fermentation.
7. There should be no diacetyl present in the finished beer. |

Adding Ferulic Acid Rest to enhance clove character.

Notes: The malt extract was dark Munich instead of light Munich. After a few days in primary, the fermentation became stuck at a gravity of 1.040. After another week, no change so I decided to add another lager yeast - San Francisco lager since that's what I had on hand. This brew is truly a bastard that's unsure of it's roots. |

Notes: Woah this is strong! ABV is well over on this one - closer to 9% i reckon.
body was thinner than my Duvel clone and alcohol higher - that will be all the sugar I added.
Once you get over the initial strength and alcohol hit, its quite pleasant - best drunk in small amounts and not one for quaffing.
Lovely satisfying finish. you know your drinking it! |
