OG: 15.2P
FG: 2.4P
IBU: 60
SRM: 10.5
81.5% base malt (we use Canadian 2-row)
8.5% munich malt
8.5% caramel/crystal 8 malt
1.5% caramel/crystal 60 malt
Kettle hops: CTZ
Whirlpool hops: Cascade/CTZ
Dry hop: CTZ/Centennial/Chinook/Cascade, about 1lb/bbl total
Ferment with English ale yeast. Our house ale yeast is a proprietary British heritage strain. You’re looking for extremely flocculent, fruity, fast ale yeast. We ferment at 67F.
I have altered the bill to include malt and hops that I obtained from the Northern Brewer Chinook IPA kit.

Notes: made a 200ml starter - split between batches
Used all Tim's equipment. Mashed in and hit 154 - held for an hour. Recirculated and sparged for too long but collected 12g. of wort that was slightly too high. Topped up and was fine - should have had 9g. of sparge water, not 8.
First runnings: 1.085
Last: 1.015
Boiled and cooled (gravity through Tim's plate chiller) to 60. Pitched yeast into 2 carboys. Activity in 12 hours - through the airlocks (twice) in the next 24 hours - good yeast pack on the bottom and top!
Fermented 17 days and crashed for 5. Kegged and carbonated -tasted good at begging! Didn't get all the way to 12 as it was supposed to, so maybe 2 separate 1000ml starters would have been better than splitting the one 2000ml starter up. |

Notes: Make yeast starter 2 days prior, boiling 1000mL spring water for 12 mins, mixing in 4oz DME and 1/2 tsp yeast nutrient. Chill, pitch yeast, and use stir plate to aerate.
Brew day:
Bring 3 gals spring water to 156F strike water temp, then steep grains for 60 mins. Mashout at 168F
strain liquid from grain bag into boil kettle, and sparge/rinse with 1/2 gallon 170F spring water. Top off with up to 1 1/2 gals boiling spring water to bring to 4.5 gals starting volume.
Boil 75 mins, adding DME and hops/extras per schedule.
Chill to 70F, and auto-siphon into 5 gal carboy, pitching yeast and adjusting water volume with addition of pre-boiled/chilled spring water to achieve target OG.
Aerate, and ferment at 70F (or cooler) using blow-off tube. Switch to airlock after ~2-3 days. |

Notes: I'm using no flavor or aroma hops for that Dry Stout malt flavor. I'm hoping the Chocolate will be the pronounced flavor, along with the raspberry below.
USING EXTRACT FOR AROMA:
I've used this Aroma technique before - the higher the IBU's, the more extract you can put in the keg without overdoing the flavor. For example, if you get the IBUs up to 85, then you might put the entire 4 oz bottle in the keg if you want to taste the flavor a little.
With high IBUs, you can use more flavor extract without huge flavor, BUT the aroma is amazing. Example, 86 IBU Irish Red Ale with 3 oz of Blueberry extract - couldn't taste the blueberry, but you could certainly smell it. |
