Notes: My first home hop harvest of 650g mixed chinook and cascade.
Wanted to try something a bit different since I've gone off crystal malt a bit so I used a bit of Munich and aromatic to darken it a bit instead and I might have gone a little bit overboard.
It was a split batch, with 1/2 originally planned to be US-05 but I chilled the wort too cold and ended up pitching a lager yeast for that one. The other 1/2 was Voss Kviek at 38 degrees. |

Notes: Brewed as an experiment to bring out the sweet fruity thiol-derived flavors reported for Cosmic Punch (OYL-402) on the extra-dry backbone of a brut IPA. Thiol-rich hops (Cascade) are added to the mash, as the enzyme-rich conditions of the mash are reported to be important for conversion of thiol precursors into a bio-available form. Late hop additions are meant to enhance the New World tropical fruit aromas without going too crazy on bitterness. No dry-hopping is done, as this step is reported to remove thiols from the finished product (unclear if due to chelation, hop creep, or oxidation). |

Notes: - mash in temperature 66.6c.
- preboil gravity 1050
- OG 1055. 66% effeciency. I get 4-5% less efficiency when I use more grain - is this because I do one sparge?
- day 6: 1.018 (4.86%). Dryhopped straight into the fermentor to reduce oxigination and we have 3 days to drop another 6 points gravity. Hop aroma/flavour subtle.
-141 gr sugar at 14c to produce 2.4 co2. Normally do 2.2 (131 gr) so this is an experiment.
- 5.4% abv. FG was 1014, 2 points higher than prerdicted by BF. Don't know why as temp held steady at 20c and 9 days fermentation. TASTING. It has a sweetness and maltyness. Promising. The stuck nose in dry hop bag and it's very floral, soft, and citrus. When dryhopping in main fermentero you have to tie bag smaller or some comes out the top. Absence of crystal not even noticable in color.
