Brewed as an experiment to bring out the sweet fruity thiol-derived flavors reported for Cosmic Punch (OYL-402) on the extra-dry backbone of a brut IPA. Thiol-rich hops (Cascade) are added to the mash, as the enzyme-rich conditions of the mash are reported to be important for conversion of thiol precursors into a bio-available form. Late hop additions are meant to enhance the New World tropical fruit aromas without going too crazy on bitterness. No dry-hopping is done, as this step is reported to remove thiols from the finished product (unclear if due to chelation, hop creep, or oxidation).
