Notes: January 10, 2023 - Mash-in at 126 °F (52 °C); rest 15 minutes; raise temperature to 144 °F (62 °C); rest 25 minutes; raise temperature
to 162 °F (72 °C); rest 20 minutes. Lauter.
Boil 75 minutes, adding hops per schedule. Cool to 75 °F (24 °C). After the beer reaches terminal gravity in five or six days, reduce temperature by 4 °F (2 °C) per day to refrig. temp. Bottle about four weeks after brew day.

Notes: 12/13/2021 - Brewed. Note late addition of DME after 60 minute boil, bring back to boil, flame out.
2/7/2022 - Sampled. Wonderful! Best lager yet, actually probably better than any lager I've had!
10/27/22 - Converted recipe to all grain from hybrid grain/DME today and order materials from Morebeer. Changed yeast to Saflager 34/70 from Lallamend Diamond Lager as 34/70 will ferment at my store room temp of 65 degrees. Worked fine at this fermentation temp.
1/16/23 - Brewed. Will Use Pilsen DME for bottle conditioning. OG 10.48. 5.5 gal in fermenter. Fermenter temp 72 degrees. Fermentation temp 65 degrees. Mash pH 5.4 average; my well water is 7.5. Forgot the fining and the nutrient! |

Pitch the yeast, with a target fermentation temperature of 50°F (10°C). After 10 days, bump up the temperature slightly (54°F/12°C or so), and wait another few days. At the 2-week mark, warm to 65°F (18°C) and hold for 2 days. This will do is minimize diacetyl and sulfur production and/or retention, yielding a squeaky-clean pale lager.
