Key points:
* > 50% wheat malt, rest pilsner
* Mash options:
- Decoction: 20 mins @ 55C, pull single decoction and boil for 10-15 mins, add back to mash raising to 67C for 60 mins.
- Single infusion: replace some or all pilsner with Munich and mash at 67C for 60 mins. Can adjust to somewhere in 66-68 if you want more/less body. Went light on Munich in this recipe (10%), add up to ~30% if you want it more grainy.
- If you want to add more clove flavour, add ferulic acid rest: 20 min @ 43C.
* Use German hops (Hallertau, Spalt, Tettnang, Perle, Magnum or Tradition), target ~10 IBU, add mainly @ 60 min, avoid excessive late additions.
* Don't use finings.
* Boil: 60 min probably fine. Some claim than 90 mins can reduce SMM from pilsen (only do this if you notice significant canned corn flavour in previous batches)
* Ferment with Wyeast 3068 (Weihenstephan) @ 17C until completely attenuated, pitch one pack per 20L. Target 200B cells (~0.75 M / ml / P). |

Notes: BASE MALT: obviously, I should be using MO, but I don't have it to hand, so I'm adding ~2% vienna and ~2% munich to the pilsner base to increase complexity. I also have torrified wheat and oats that I need to use up. I'll put equal amounts in.
SPECIALITY MALT: My situation is that I need to use up a bunch of mixed malts. I am planning to split the base wort in two and, having separately steeped and boiled two different speciality malt bills, add these to two different fermenters. To maximise the difference between the two resultant beers, one will be on the light side the other on the dark...
I developed a very simple formula using the average colour of the speciality malts. It is based around a BYO article on English bitter, that containing three principles:
1) Speciality malts can have a colour of 40-150L.
2) These should not exceed 10% of the grist.
3) The higher the colour, the lower the percentage of grist: "A bitter with 10% 150 °L crystal malt may not be cloying, but it can be too intense a flavor for this style."
For a starting point, I decided that a 150L malt cannot exceed 7.5% of grist. Then just took a linear scale based on that.

- lots of liquid left in grains/bag; more pushing/squeezing than usual
- 7 gal pre-boil
- decently consistent boil; remembered whirlfloc
- just under 6 gal post-boil and chill
- 1L starter made with Proper Starter, pitched @ 64 after 17 hours
- significant activity within 10 hours; airlock filled with krausen by 12-14
— actually killed foam on top, swirled and changed air lock
-- large, clear bubbles (nothing like I've seen before) by 24 hours; no real krausen but plenty of airlock activity
-- temp to 68 after 48 hours; no clear activity
