Notes: This is Russian River's Pliny the Elder recipe posted by Vinnie Cilurzo.
Mash grains at 151-152° F (66-67° C) for an hour or until starch conversion is complete.
Mash out at 170° F (77° C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose, and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort to 67° F (19° C) and transfer to fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67° F (19° C) until fermentation activity subsides, then rack
to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then add the second set. Age five more days. |

Briess Golden Light used.
This recipe refined after 3 other tries at a decent clone - this is pretty close.
Mini-mash at 65c and adding malt and dex while heating.
) minute hops is 30 minute whirlpool with lid off - wort cooled to 80c with ice - add hops gradually very 5-7 minutes and cool wort with ice at each stage of hop addition to reduce temp by 5c at each addition with last at 65c.
Liquid malt dissolved in fermenter with 1 litre of boiling water.

Notes: I guess it's not a strict Tropical Stout since I'm going to add coffee, maybe cacao nibs and put barrel cubes in the fermentor but that was the base I started from.
I ground 150g of coffee with my espresso coffee machine and put it into the mash with the malt. I'm hoping that it reduces the green pepper flavours that I hate in coffee beers. I am sacrificing control by not adding it as cold brew in secondary and I'm probably sacrificing efficiency of coffee extraction but I'll see how it goes.
I chucked the oak cubes in at yeast pitch to avoid opening the fermentor and to hopefully shorten the time I have to wait until I get flavours from them. |

Notes: This is a kettle soured recipe. You will mash the grains, cool and pitch the berliner weisse blend. This has lactobacillus which will quickly sour your beer. When the pH reaches 3.4-3.6 (around 48 hours), boil the wort and add hops as usual. When this is finished, chill and repitch with the European ale yeast. Keep in mind, the point of the first pitch is not to fully attenuate the beer, it is simply to reach your target pH.
When you are finished TRIPLE your amount of cleaning and sterilization. THIS IS KEY. Unless, you want your next beer to be a sour also. The boil helps, but is not fool-proof.
Additional note: This recipe is designed for use with a 8 gal MLT & kettle and requires a top off into the fermenter. If you have a 10+ gal vessel, increase your sparge water amount to 3.5 gal and the boil volume to 6 gal. |

Notes: before mash - toasted 1/4 pound of the oats for 30min @ 350 degrees.
similar to cali blonde and rasp wheat i did:
mash - buckwheat, oats, white rice syrup solid. (afterthought - I should have added the white rice syrup solid after the boil).
added white sorghum syrup upon mash completion.
boil - add hops as desired, stir occasionally.
after boil - added the belgian candi sugar and passion fruit concentrate.
once the wort is cooled to 70 degrees, pitch yeast.
Good Luck! |
