Notes: Brewed 3/20. Rest at 130 10 minutes, main mash 147 for 45 minutes, return single decoction; temp 153 F. Raise to 170 F for mash out. Pitch slurry from 2.5 L starter into wort cooled to 58F. Fermented at 50 F.
04/06: Removed from fridge, temp allowed to rise to 62 F for diacetyl rest, then returned to fridge on 04/08.
Tasting notes: simply fantastic. Best Czech pils I've made. Malty, subtly floral, yeasty, see air aroma, perfect color. Only change would maybe to replace the Perle for bittering with something softer (more Saaz?). |

♦ SESSION NOTES: Extract Beer Kit. Added to much water because it's an extract kit. Should have started with 5 gallons and adjusted water level at end of boil.

♫Create 8.5 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose.
Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
•Fitter Hoppier AG - American IPA
WAKE UP!!!!!!
15 minutes – Add Immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last

Will ferment for 10-14 days in primary, then transfer to secondary and dry hop with 1oz Cascade whole leaf for another 7-10 days.
Very experimental brew for me. Second batch, had an array of ingredients.
Named quadripartite in hopes that the ingredients representing Belgium, America, Germany and the U.K. each shine through. Fingers crossed. |

Cream Ale Recipe
This is a very simple, inexpensive cream ale recipe that will get every BMC drinker in the room enjoying homebrew. So named because of the three different crops that go into the grist (Barley, Corn and Rice).
The grain bill is cheap and in this case, you can use Minute Rice instead of flaked rice. No step mashing required. Simply combine the ingredients and follow a simple single infusion mash at around 152 degrees. I also mashed this for 90 minutes to get a highly attenuated beer. FG was 1.005...leaving a very dry, crisp beer with no noticeable graininess.
This beer clears up quickest of any of my recipes. |
