Notes: Fermented down to a FG of 1.010. Could be slightly dryer but otherwise delicious. Will try a side by side sample with the real thing to compare.
Side by side comparison reveals the original is much lighter in colour and dryer, but hop flavour is spot on. Next time skip the Munich and maybe replace with honey and try yeast with higher attention. |

Notes: Ferment at the recommended temperature for your yeast strain (refer to the yeast lab specs, roughly 65–70°F/18–21°C). Transfer the beer to a secondary fermentor after 10 days of primary fermentation. Continue fermenting at 65–70°F (18–21°C) until all signs of fermentation are gone, usually another 2 weeks.
The number from the Recipe at the link were way off. Scaled it down even further to get to the correct OG/FG and ABV |

Notes: Medieval ale.
At end of mash, add boiling water to reach 170 F then go directly to fermentor - no sparge, no boil!
Let cool in fermenter before pitching yeast (~12 hours).
Open fermentation - cloth cover only. Fermentation was slow and no foam cap.
Drinkable as soon as fermentation stoped in about a week.
Really funky at first, but settled down in a few more weeks.
Bottled for aging with no priming sugar, but still over-carbonated a bit - try lower mash temp next time.
Not sweet at all, like everyone says it would be without hops.
After 3-4 months it is really quite good with toasty malt, a little smoke, and lingering wild yeast funkiness. Dry, not sweet. |

"This is THE original Pliny recipe, given to us directly by Vinnie. This beer is an intense double IPA: High bitterness with a dry malt finish, 8% alcohol, 6 separate hop brew additions, 3 separate dry hop additions, and intense hop flavor and aroma! Pliny sets the standard for Double IPA's!" |

Notes: Two 4.5 Gallon batches of different flavors brewed at same time
RED CAP Mango Wheat - 1oz El Dorado @ 35 mins. Dry Hop 1.3oz Citra, 1.3oz Idaho 7, 1.25oz Amarillo, 1.25oz El Dorado
WHITE CAP Raspberry Wheat - 1oz El Dorado @ 35 mins. Dry Hop 2.7oz Simcoe, 1oz Centennial, 1oz El Dorado, 0.7oz Cascade
Cutting 1lb of Pale or Wheat will get the beer around 107 cals, closer to 100 calories. Because each home brew system is a bit different, I do it this way to make up for possible loss in efficiency across the board.
Brewing Salts
Maltodextrin last five minutes of boil
Dry Hop 5 Days before Kegging/Bottling
Brewed 7/22/21 - Kegged 8/18/21
Update: Took a few months to ungreen. In future, these would be great beers at a higher abv.
