Notes: Decoction mash schedule
protein/ acid rest at 110F for 20 min (4gallons water all-grain)
scoop out 3 gallons of grain/water mix and heat to 65-62C
mash grain for 40-50 minutes in an insulated 3-gallon pot
boil mash for 40min to 1 hr
thoroughly mix boiled mash into rest of grains in the mash tun
mash all grains at 68-65C for 1 hr
sparge grains for ~10 minutes with 80C strike water
boil wort 1hr adding hops at beginning of boil.

| Notes: Frozen blackberries will work fine and are usually going to be cheaper than buying fresh. Use 5-10lbs depending on how strong of a blackberry flavor you want. Thaw in the fridge overnight, then puree blackberries with a bit of vodka to sterilize. Add in secondary for a few days. Use a muslin bag to contain the blackberries, or transferring later is going to suck. |
