Notes: I have the liquid extract can size set at 3.3lb's, because that's the only number I could find on the net. I guess it's correct.
This recipe does equal the actual abv according to the hydrometer reading.
OG: 1.154
(post wort [aka post yeast-pitch] day-#2 in carboy: 1.024)
FG: 1.014
Supposedly, that should equal 18.3% abv., but this recipe calculator suggests 3.9%. I'm not convinced it's 18%, but it's sure not 3.9% either! Perhaps it is stronger than I think, b/c I usually have a bit of a head-pounding afterward.
Is priming sugar not included in this form? |

In this extract recipe, the oats are not going to provide any sugars for fermentation so the amount of malt extract is greater than the other recipes. Place the oats loosely in a grain bag. Since the oats will swell, avoid packing them too tightly in the bag. Use more bags if needed. Steep the bag in 2 gallons (~8 L) of 170 °F (77 °C) water for about 30 minutes. Lift the grain bag out of the steeping liquid and rinse with warm water. Allow the bags to drip into the kettle for a few minutes while you add the malt extract. Since this is only oats, squeeze the bags to extract the liquid. Add enough water to the steeping liquor and malt extract to make a pre-boil volume of 5.9 gallons (22 L) and a gravity of 1.043 (10.6 °P). Stir thoroughly to help dissolve the extract and bring to a boil.
Once the wort is boiling, add the bittering hops. The total wort boil time is one hour after adding the bittering hops. Chill the wort rapidly to 68 °F (20 °C), pitch the yeast and aerate thoroughly. Follow the fermentation and packaging instructions for the all-grain version.
Begin fermentation at 68 °F (20 °C) slowly raising temperature to 72 °F (22 °C) by the last one-third of fermentation.

Notes: If you like a nice pepper beer with an extra kick (but not over powering), this might be right up your ally!
A day or two before Secondary Fermentation, Roast habanero peppers over open flame until a nice char is present or bake in oven at 400 degrees for 15-20 minutes.
Cover roasted peppers with vodka or Bourbon in a sealed container and soak for at least 24 hours. (this will sanitize the peppers).
Add peppers to carboy or secondary fermentor and rack in beer.
Add in vodka or Bourbon for extra kick if desired. It will raise the avb another .5% or so.(Otherwise save the booze for some kick-ass bloody mary's!)
Also, instead of adding peppers to the secondary fermentor. You can add the peppers directly to individual bottles during bottling day. This gives a very unique flavor as well!

I racked to the secondary after 10 days, then waited a week before bottling.
Looks and tastes true to the style, except it has just a hint of cranberry. Opened at a Christmas gathering and it was far more popular than any of the commercial beers offered! |
