Notes: An early ( for me) example of trying to create a complex cellaring beer, using a Sasion style was obviously not the way to go.
I have sampled this after 6 years sitting in my safe room {beer wise} 12 large bottles found and a possible extra 5litre demijon
There is a medium dry tone to this with good levels of complex light fruit flavour and no undue off flavours like wet cardboard or horse blanket etc.
Sour is mild and pleasant and carbonation is quite low and produces no head. I suspect there was not much for the Brett to work on so little effect.
I think the extended family will be required to consume the remainder this Easter.
6 years of cellaring is a bit long for this , I would hope to be able to get a beer like this with a couple of months in the cellar or less. |

Notes: The day before transferring to secondary, add 8 oz of corse ground coffee beans to a large sanitized mason jar. Bring 1 cup of water to a boil and remove from heat. Allow to cool to 150 degrees and add to coffee grounds.
After 24 hours add coffee to secondary and transfer beer from primary container.

Notes: Mill the acidulated malt. Place it and the hops in a grain bag and steep using 1.0 gallon (3.8 L) of 154 °F (68 °C) water for 45 minutes. Rinse the grain bag with about 2 quarts (1.9 L) of water and allow it to drip into the kettle for about 15 minutes, but be sure not to squeeze the bag.
Add enough water for a pre-boil volume of 2 gallons. Stir in both malt extracts and begin the boil. The total wort boiling time for this recipe is 10 minutes. At the onset of a full rolling boil, add both the ground coriander seed and the salt.
Cool the wort to 68 °F (20 °C), transfer to your fermentation vessel and aerate the wort adequately. Add the contents of your yeast starter to the chilled wort. Ferment around 68 °F
(20 °C) until the final gravity is reached, which should be in 5 to 7 days.
Add raspberries to fermenter and allow the beer to mature another 5 to 7 days around the same temperature. Your beer is now ready to rack into a keg or bottles along with the priming sugar. |

Notes: Heat 3 gallons to 150 degrees. Add steeping grains and maintain temperature for 30 minutes.
The total wort boil time is 60 minutes. Add the hops once the wort begins to boil and again with 30 minutes remaining. Add 1/2 tsp Irish moss with 15 minutes left. Chill the wort rapidly to 60 degrees, let the break material settle, rack to the fermenter and aerate thoroughly.
Use active 1500 ml (150 g Bavarian Wheat DME) yeast starter. Ferment at 60 degrees. Allow the beer to lager at 35 degrees for at least four weeks before bottling or serving. When finished, carbonate the beer to approximately 2.5 volumes and serve at 50 degrees.
