*Taste after one week: Still really sweet, w/ strong amounts of cranberry flavor -- maybe too much, and good, pink coloring. Very subtle ginger notes; mostly just an after-effect, and not really noticeable up-front. Still really cloudy. Fermenting really slowly, but is progressing. Clean overall taste, not much yeasty flavor. Apple flavor is sort of bland and just sweet; maybe needing more tannin from skins, and store bought juice isn't quite enough. Continued drying & aging should help clarify and sharpen the flavors. Aroma is pretty negligible.

**Taste after two weeks: The sweetness has nearly totally fermented out, w/ good alcoholic sharpness. Has a pretty strong ginger flavor; good pink coloring still (though pretty cloudy overall). Leaves the mouth feeling dry and puckered... Overall, rather dry and tart. Decent apple notes upfront, and then bitter after taste. The yeast is still present, and some aging should mellow that out. Still thinking that the overall apple tone is somewhat flat, and that additional apple tannins would help -- though I think the freshly juiced cranberries added the needed tannins, just not apple-y ones...

[Next time: 1) Just use pre-packaged cranberry juice... 2) Add in a few fresh squeezed / pressed apples for a more robust apple flavor, especially sharp flavored apples.]

Notes: Place Grains (8oz) in 3.5 Gal cool water. Raise temp. to 157F (higher temp for more dextrin extraction) and hold for 30min. Pseudo-sparge. Bring to boil, kill heat, add DME, return to boil -> boil 10 minutes before beginning hop schedule. Hops/Misc.: Bittering at 60min, Flavor + Orange, Lemon, Coriander, and Moss at 15min, Aroma at 1min. Cool in ice bath (~25min) to 80F. Siphon into primary and pitch liquid yeast directly in at 75F.

Bring Water to Boil (according to your kettle volume) If you are able to boil the entire batch you will get better hop utilization.

Turn off burner , add extracts stir until dissolved.

Return to heat bring to boil.

Once boil is controlled, start 60 minute timer and add .75 oz of Mount Hood Hops.

Last 10 minute to Submerge wort chiller to sanitize.

Last 5 minutes add .25 Mount Hood Pellet Hops

Cool below 80 deg aerate well and pitch yeast.

Maintain Fermentation Temp of 68 degrees.
Follow you normal practice of racking to secondary, some people do, some people do not. This recipe would be safe to leave in primary until ready for packaging.

Notes: Sanitize your gear, duh! Bring at least a half gallon of water to boil, remove from heat. Add DME's and stir to dissolve. Add honey and stir until combined. Some folks suggest boiling the scum out of the honey once combined, but I've had good luck otherwise. Cool the wort. While cooling, load your fermenter with a gallon of room temperature bottled spring or purified water. When cooled, add wort to fermenter, prep and pitch your yeast.

Secure an airlock and let ferment in cool dark place for 2 to 3 weeks. Next you have a choice; bottle unprimed for a still/ slightly carbonated braggot, or prime bottles with 1 tsp of honey or sugar per bottle to get a sparkling braggot. Once bottled, I suggest letting it age for a month. After aging, sparkling should be cold conditioned for 2 weeks minimum. Still braggot can be chilled or serve room temperature.
