I goofed and should've pitched two packets of yeast at the beginning. I pitched a second packet about halfway through fermentation after it slowed, and also added some Amylo 300. Pitching two packs at the beginning would've sufficed. |

Notes: Step mashed , 30 at 145, 60 at 155, drained grains while brining up to boil. Very good. Room temp fermentation with a 45 cold crash in wine chiller for a week. Doesn’t taste anywhere near 95 IBU. Will do again. Yellow capped. I’d guess the IBU to be 40 ish.
Update. Drank 10 days after bottling. Fantastic will do again. |

Notes: Vienna lager with a twist (almost makes it an IPL)
Add small amount of Mosaic in WP to give it a subtle more floral berry citrus twist. Goes in line with Mountain Goat style.
Calling it The Mozart because Mozart lived in Vienna and the beer makes you sing!
Could play around with different Mozart inspired tunes for names. |
