Notes: Eitt af stíleinkennum NEIPA finnst mörgum vera haze. Reyndari bruggarar og bjórunnendur líta þó frekar til góðrar áferðar (e. mouthfeel) og gríðarlegs magns af humlabragði sem einkenni stílsins. Einnig minni beiskju og fruity estery bragða úr gerinu sem skera hann frá venjulegum IPA.
Haze í NEIPA orsakast af því að prótein bindast polyphenols. Prótein koma úr maltinu, sérstaklega próteinríkum möltum, hveiti og adjuncts eins og höfrum. Polyphenol finnast í malti og humlum. Mikið magn af aroma og flavour humlum í NEIPA veldur því kjöraðstæðum fyrir haze, vegna hás polyphenol magns.
Polyphenol er þó einnig þekkt fyrir það að valda beittum, málm- eða lyfjakenndum brögðum. Eitt þekktasta polyphenolið í tengslum við vín og bjór er tannín. Það þarf því að tempra freistinguna til þess að dæla endalaust af humlum í bjórinn til að ná fram juicy humlabragðinu.
Því munum við þurrhumla 24 klst. eftir bruggun til að ná fram biotransformation. Það er ferli þar sem gerið umbreytir efni úr humlunum sem er venjulega lítið bragð af og gerir þau bragðmeiri. Þurrhumlun í virkri gerjun virðist einnig minnka flocculation gersisns sem hefur þau áhrif að humlar sem bindast gerinu verða frekar eftir í bjórnum. Einnig virðist þurrhumlun í virkri gerjun ýta undir haze. Það þarf að passa upp á það að gerið sem er notað geti valdið biotransformation, ekki öll ger geta gert það.
Við munum nota sirka 30% flaked bygg, hveiti og hafrar. Ástæða þess er að korn sem er ekki maltað inniheldur minna af polyphenols sem leyfir okkur að nota meira af humlum án þess að fá óæskileg brögð.
Þessi eiginleiki gæti þó dregið úr haze. Markmiðið með bjórnum er mikið og gott humlabragð svo við sættum okkur við minnkað haze.
Til að ná fram góðu mouthfeel munum við nota marris otter og munich malt. Einnig munum við setja mikið af klóríð í vatnið en það ýtir undir mýkri áferð.

Spurning hvort það þurfti protein rest vegna hveiti/hafra
Spurning hvort cold crash taki ger sem er bundið humlum úr bjórnum, ef svo þá er það ekki endilega ákjósanleg í þessum stíl.
Spurning hvort það þurfi munich fyrir mouthfeel fyrst við erum með hafrar og hveiti, kannski samræmist meira maris otter í stað munich betur stílnum.
Spurning hvort imperial A28 juicy sé fært um beta-glucosidase, þ.e. ígeti breytt glycosides í beta-D-glucosides. |
