Notes: Added 2 tabs K-Meta to mash.
After 158* mash rest and recirculation, filled kettle to 9.5 gal then transferred last 2 gal runoff to side kettle to condense down to ~0.5 gal.
Main kettle w/ 9.5 gal was heated to ~170* then rested for an hour during a work meeting as 2gal caramelizing boil simmered on stovetop.
Caramelized wort was added to boil kettle later for ~10gal pre-boil volume.

Notes: Strong Scotch ale base. Mash all grains at 152 ?F (67 ?C) for 60 min. Mash out at 168 ?F (76 ?C) for 10 min. add maple syrup at boil. Steep cherries in 2 qts. (2 L) of first wort runnings for 30 min. Strain out cherries and add this wort at end of boil. Ferment at 62–64 ?F (17–18 ?C). Dry spice in secondary for 2–3 weeks.
