This one seems slightly darker than the original.. It has a fabulous flavor right away. The 30 minute shift in hop schedule appears to be the way to go.

Notes: Idea of this beer: try out the flavour of Rakau hop from NZ for a experiment later on with additional 2 hop varities
Starter was done with 0.5 l of alc-free beer and 0.4 wort from a brewery. No SG or °C were measured. One day before brewing.
10% Spelt malt cause I bought too much and wanted to see what would happen.
Mash-in at 55°C to give it a short time to break down some of the proteins from the spelt malt and heat directly to 67°C and make a rest for 1h.
Add first dry hop at Kräusen or right after it starts to decrease.
Not sure about 2nd dry hop when kegging. Depends on taste after 1st dry hop.

Notes: 1 lb red wheat + 1 lb caramel 40 was used instead of 2 lbs carawheat due to Homebrew store out of stock.
1.5 lb blackprinz + .5 lb kiln coffee malt used in place of 2 lbs midnight wheat due to Homebrew store out of stock.
4 oz Sumatran Coffee added at flameout
54 oz. of Robust Dark Maple Syrup added in secondary. Afterwards potassium sorbate was added to inhibit refermentation of the maple syrup that was added to the keg. This is a form of back sweetening with the maple syrup that should help limit any boozy effect the initial maple syrup fermentation may have imparted in secondary. This should be done to taste, no set amounts!
3 gallons will not see the addition of potassium sorbate and will be bottled using maple syrup as priming sugar. |
