100% wheat or 50/50 wheat/pilsner.
Fermentation temp and O2 are crutical.
Start with 2lb fruit per gallon and adjust up by taste.
Ideally wild yeast and aged in barrels.
For wild yeast, leave open to air while cooling. If done after "2 nights of frost" there will be a better ratio of wild yeast to bacteria in air. |

Cut 4- 2lb pumpkins in half and place face down on roasting pan in 1/2'' of water. Roast at 450 for 60 mins, skin and add to mash.
Place 6 Tbsp of pumpkin spice in muslin bag bring to boil in 1/2C brown sugar and 1C water. Cool and add to keg. |

For 1 gallon (4.5lt):
2.25 lbs (1020g) Pale Malt
7 oz (200g) Brown Malt
2.5 oz (70g) Black Malt
1.0 oz (28g) Fuggles or
Goldings Hops
Mash grain for 3 hours at 150º F (66±1º C). Raise temperature to 170º F (77º C) for 30 minutes.
Sparge with hot water at 180 - 185º F (82 - 85º C) to O.G. or required volume.
Boil with hops for 90 minutes.
Cool and ferment with a good quality ale yeast.
Mature 4 months. |

Notes: 1a) Get the sour mash pH down to 4.5, by adding phosphoric acid.
1b) Boil for 5 mins, chill to 100F, & add 11 capsules (20B cells each) of probiotics.
1c) Leave it aside for a day or so, till it reaches 3.1 pH.
2a) Boil for 25 mins.
2b) Pitch yeast & ferment as normal.
3a) Add the mango + pectinase, & secondary it for a few days, after fermentation is done.
3b) The mango should naturally carbonate the beer. If not, burst carb as usual.
4) Cold crash for a few days, before serving. |

Notes: A light, crisp Duvel-style Belgian strong ale. A Sotalien/Kronstad Bryggerier cooperation, jan 2015.
Fermentables "German" is standard German pilsner malt.
Sugars(cane and candi),boiled in 2l water added after height of primary ferm(44 hours after pitching). Due to fermentor capacity; about 40% of yeastfoam harvested/removed.
Priming and bottle fermentation with rehydrated safale 05. (recommended 1 mill cells/ml/plato), approx. 24 bill cells/1.5 gram of yeast. Plus priming sugar.
Note: This turned out to be one of our best beers ever. After about one year, it had a very smooth and complex taste. So most likely, this beer is suited for storage at least up to 12-14 months, probably longer. And it's worth the wait.
Final Gravity at 12, after long ferm.(Duvel is 7 or 8.)
