Notes: Kale neutral.
25L wash
100g kale, blended with water
5kg white sugar
90g bakers yeast
I just chuck it in together to melt sugar, then add yeast at around 35c. Should start at 1080 and regularly finishes at 0989. It will clear to almost translucency.
Sizes

18.2L
26.8L - 125g Kale
1kg cane sugar = 1.2l
5kg sugar = 6l
2 stages
2.5kg made up to 17l with 60g yeast and all the kale juice then after 3/4 days add remaining sugar and yeast (rehydrated) to make up to 27l. Whisk liquid well at both mixes

Notes: 4/6/2025
I didn't take any notes on the outcome of this beer. From what I recall, it was corny sweet and tasted more like a flawed brew than a shitty style, pretty sure the batch was dumped. I'm not giving up on this though.
Not sure how to rebrew with more promise because the recipe looks pretty good, maybe chill out on the corn and add rice or more base malt and sugar or something. Make sure yeast pitch is ok.
Inspired by reading a zymurgy article about this
https://mydigitalpublication.com/publication/?i=828409&p=44&view=issueViewer

==================================
3/18/2022
brew day went fine. 2.5 hour mash (because of scheduling) got the g40 mash recirc working well the wort was really clear.
decided to leave out the cane sugar, had good 70% efficiency for 1.074 wort and ~8.0% expected abv. that will be plenty.
===================================
3/15/22
added hops, water calc is being weird or else i dont understand. for balanced profile its saying i need 100ppm and that my starting water is 0.something when it should be 50 something to start with?? could add baking soda to increase it but ive never had to do that before??
===================================
2/25/22
getting more real/practical. swapping hops and yeast for some stuff that i have on hand. dropping efficiency down.
i dont have faith the flaked corn will add any gravity points. do you need to cook it first?
still need to figure out what water profile for this.
===================================
2/14/22
corn syrup too expensive. could go sugar or grits, but lets take this opportunity to use flaked corn. similar in price to grits. never used before. maybe get different flavor than grits. i dont think you need to cook them, so simpler than grits. less efficient than corn syrup so boost the grain a little and add a lb of sugar.
need to setup water profile
===================================
2/7/22
getting pretty real. worried about using 32% corn sugar so reducing that to 20%. prob will brew on old system but efficiency will prob be high with the sugar, adjusting up to 68. Might use lutra....
adjusting grain bill. prob dont want to use karo since it has vanilla. comes in 32floz jars which is about 2.75 lbs. there are some in amazon that dont have vanilla but like 10 bucks, we need something cheap for the philosophy of the brew, not shipped. or else might as well just use cane sugar.
consider using citra noble or some other lager hop you have on hand other than cluster.
should consider water profile...
===================================
4/5/21
getting realer. adjusting efficiency to 60s and adding a half pound base malt to get to 8%. could consider using cooked corn grits instead of corn syrup for more authenticity or even the real flaked corn. but. never brewed with corn syrup before so itd be nice to add to my resume.
im thinking we could package in 22oz bottles.
===================================
a lot simpler than the official recipe. not sure if all that corn syrup/sugar would fly but elsewhere they said use 1/3 corn. im just using syrup and sugar to try to ensure my final gravity will be low.
using cluster in the recipe but could/would probably substitute for something else that i already have on hand. maybe millenium

Notes: Mill the grains and mash at 145°F (63°C) for 45 minutes; raise to 154°F (68°C) and rest for 15 minutes; then raise to 162°F (72°C) and rest for 15 minutes. Mash out at 169°F (76°C).
Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate.
Boil for 70 minutes, adding hops according to the schedule. At the end of the boil, stir or pump to create a whirlpool, add whirlpool hops, and allow to steep 20 minutes. After the whirlpool, chill to about 56°F (13°C). Oxygenate the wort and pitch the yeast.
Ferment at 59°F (15°C), then raise to 64°F (18°C) for a diacetyl rest when the gravity has dropped to about 1.024. At terminal gravity, dump the yeast or rack to secondary and add the dry hops.
After 3 days, remove the hops or rack again. Chill to 31–32°F (0°C) over 2–3 days. Once cold, fine, centrifuge, or filter to clarify. Package and carbonate to about 2.6 volumes of CO2.
BREWER’S NOTES
Water: We use reverse-osmosis (RO) water and add minerals to target about 90 ppm of calcium, with a 2:1 ratio of gypsum to calcium chloride. We target a mash pH of 5.4 by adding phosphoric acid, then we adjust the wort to pH 5.1 at the end of the boil.
Enzymes: If you take the all-malt option, you can try adding amyloglucosidase to the mash to increase fermentability to levels comparable to the more diastatic North American malts.
Adjuncts: If you feel like using flaked corn instead of rice or want to try a cereal mash with corn grits or brewer’s rice, go for it! In the end, we’re just looking for a clean, dry IPA with a very light malt character. |
