 - After 1 month of primary fermentation rack onto oak cubes (around 8 for 16l) 
 Also add bourbon at a rate of 15g/l
 And for whiskey batch its the same (i guess) 
 For bourbon add Chocolate nibs (184g) and 3 vanilla beans for 16l
 For default beer (12l) add toasted pecan nuts (227g before toasting), toasted coconut strips (190g before toasting), also clean of all fat after toasting!

 - 100ml of Wild Turkey Bourbon 
 - 100 gramms chips medium toast
 - 80 gramms cubes light toast
 - 3 Weeks of secondary fermentation until the beer was racked into a keg for carbonation and further development (3 weeks or so)
 - Then filled into bottles and capped on foam.
 - The taste of the bourbon is very minimal, as are the oak flavours. But it's VERY well balanced!

                Notes: Maal 1.5 kg Pale Ale mout en 150 gram Caramel Munich I mout. Voeg 100 gram havermout toe.
 Neem 4.7 liter water en verwarm tot 66°C. Dit is je mash in temperatuur.
 Meng het gemalen mout en de havermout met het water in de mash tun. Roer goed om tot een dikke pap.
 Laat 60 minuten mash-en bij 66°C. Roer om en meet de temperatuur regelmatig.
 Verhit 3.2 liter water tot 78°C in een andere pan - dit is voor het spoelen (sparging).
 Schep na 60 minuten de moutpap over in je brouwketel. Spoel de mout over met het 78°C warme water om het zoet te extraheren.
 Breng de wort aan de kook. Voeg 14 gram Cascade/Kent Goldings hop toe en laat 60 minuten koken.
 Voeg 5 gram Cascade/Kent Goldings hop toe na 30 minuten koken.
 Voeg 10 gram Cascade/Kent Goldings hop toe na nog eens 15 minuten koken.
 Haal van het vuur. Voeg 15 gram Centennial hop toe en laat 10 minuten staan.
 Koel snel af naar 20°C.
 Voeg het gist toe en laat fermenteren bij 20°C tot stabiel.
 Na ~14 dagen fermentatie
 Tap het bier, voeg 7 gram suiker toe per liter bier wat je overhoudt en laat carboneren op fles.
 Laat het bier nog 1-2 weken rijpen op fles voor optimale smaak. |
