Notes: Black Roasted Barley (500 °L)
Mash at 120° F (49° C) for 15 minutes, then raise the temperature to 150° F (64° C) for 60 minutes.
Use 8 grams of properly rehydrated dry yeast, 1.5 liquid yeast packages, or make an appropriate starter. Ferment at 65° F (18° C). Slowly raise the temperature during the final third of fermentation by 6° F (3° C) to reduce diacetyl levels in the beer. When finished, carbonate the beer to approximately 1 to 1.5 volumes and serve at 52 to 55° F (11 to 13° C). |

Notes: Using BIAB for mash, with dunk and drain sparge. Sparge involves moving the bag to 76C water with 10 minute rest, drip draining, and a firm squeeze.
Omega Labs OYL-004 West Coast Ale yeast, 3th generation with a 2 step starter.
Replaced 22g of cascade 4 day dry hop, with 8 gm cryo Amarillo.
Bagging dry hops to reduce trub.
Ferment at 19C, raise to but not above 22C before ferm complete to ensure full attenuation and to facilitate diacetyl rest.
This recipe was designed to use available base malts.
Single pass in 2 roller mill set to .035"
Aerated wort for 10 minutes using aeration stone, with filter, and air compressor with psi low enough to just show surface bubbles without excessive foaming.
Batch started July 21, 2021 first use of SS Brewtech brewbucket. Noteable is the iSpindle worked!! |

Notes: Mash at 150° F (66° C) for 60 minutes or until conversion is complete. Vorlauf for 10 minutes or until wort is clear, collect wort. Batch sparge with volume of water to achieve 7.5 gal of preboil volume (Vorlauf and transfer clear wort). Boil for 60 minutes following hop schedule.
Cool wort to 66° F (19° C), pitch London ESB yeast, and ferment at the same temperature for 10 to 14 days. Transfer to secondary and rest at 66° F (19° C) for 14 days. Cold crash to 34° F (1° C) for 2 days, transfer to keg, and force carbonate at 30 psi for 2 days. |
