Notes: Just got a kegging setup with a chest freezer and temperature controller. So, this will be my first lager and first keg. I plan to leave at 51 for 10 days, or until fermentation slows. Then, I will bring it to room temperature for 3-4 days. Finally, I will lager at 35 for 4 weeks.
When I think of lager, I think of extra light, crisp, session beer. So, that is what I am going for here. The recipe was invented estimating 65% efficiency, and I got 78%. I started milling my grain with a different mill, (not the giant one at S2A brewery, but their smaller one), and I also built a heatstick and carefully verified each temperature during sparging and step mash. The step mash will hopefully result in a stupidly high attenuation- I would like a FG in the 1.00x range.
This is also the first batch I have tried toasting my own grains, I toasted 8 oz of 2 row at 300 degrees for 30 minutes for approximately 20L. I put 4oz of that in the mash, along with 8 oz of Crystal 10L.
The second time I make this I am going to try simply using 8 oz of home toasted 20L and no storebought crystal 10L.
First time around, planned Wyeast Pilsen Lager, LHBS sent WLP Pilsner, so I pitched both. Second time, LHBS was out of those, so I am using 1pk Wyeast American Lager and 1pk WLP American Lager. Additionally, the 2nd time I am going to do a 2L starter (with 2pk yeast) to get to the needed ~400billion cells, and I am going to krausen after primary is almost done, by reserving ~2L of wort and pitching a 3rd packet of (Wyeast American Lager) into it after around a week. I may also add 1 lb of instant grits, if I can find any with no added ingredients. This would make the beer more to style.

This recipe enhances the NB Simcoe Session Ale
http://www.northernbrewer.com/documentation/allgrain/AG-SMASHSessionAle.pdf
Kit was given to me to brew, featuring a 9-month old grain crush. BRY-97 yeast was expired, so I'm using my slurry Conan on this.
3, 1oz bags of Simcoe included of unknown storage quality these last 9 months will be used.
Pilsen DME is getting thrown into this recipe because I have an partial bag lying around to get rid of. QP of honey malt same way.
Therefore, I'm going to boil a smaller volume of over-all water (7 gal vs 7.6 gal), increase boil time to 75 minutes (+15 from 60) and then top up to 1.046 not knowing how well the 2-row converts overall. |

| Notes: Brewed 1/5/2014. Strike water was 168F and I over shot to about 153F. Recirculated about 15 gal of the mash which brought it down to 151F. Decided I should top off with a quart of cold water which brought it down to 147F. Then added a pint of boiling water which made it 148F. Next time maybe I should shoot for 149? pH was actually 5.0 which I think it way too low. I ended up adding .2 grams of pickling lime about 30min in to see if I could bump it up a bit. pH sample from about 50min put the mash at 5.15. Boil kettle efficiency was 1.047 which puts the efficiency at 89%. Hit 1.058 on the nose but I probably got about 6 gallons. Forgot to put the 0 min hop addition in so I might DH with that. I was worried about not getting enough volume from the 90min boil so I turned it down at about 20min. I probably ended up with about level with the false bottom left in the kettle so there was a bit left over so 8.75 or 9gal is probably right on for a 90min boil. Pitching temp was about 68F. 1/6/14 temp was about 67F so I decided to put an aquarium heater in the bath to bump up the temp. 1/6/14 evening temp was holding at 70F and I turned off the heater mid-day. 1/7/14 turned on the aquarium heater in the morning and bumped it up to 72F. 1/8/2014 kicked the heat up to 74F, stepped it up to 76F in the evening cuz fermentation is slowing a bit. 1/9/2013 kicked it up to 78F, will probably leave it there for about a week. I am considering dry hopping for about 7 days also. Took a gravity reading on 1/20 and it was about 1.009. Thinking I will probably leave it for another week in primary and I also dry hopped it today. 1/24/14 took out of swamp bath at 78F and biofined with 2 tbs of biofine. Kegged 1/27/14. Should force card to about 2.4 volumes of C02. Beer was different than the one I made before. In the future I will probably stick with Belgian Pilsner for the base. |
