Yeast is a mix of Voss kveik, used two times, dried after first use in a kveik ipa. Second use was in a wheat sour where Philly Sour fermented for three days, then dried kveik was added.

Notes: 2.5L starter from one vial of WLP540 (2+1L)
CS: 90 minute boil. Add syrup and soft sugar at flameout. Chill to 17'C. Pitch yeast. Oxygen for 90 seconds. Slowly ramp primary for 7 days up to 23'C. At near-terminal gravity (1.014), rack off primary yeast and drop temp to 15'C for the next 10 days then brighten at 7'C for 3 weeks. Bottle prime with Simplicity at 32g/gallon in heavy bottles. Cellar for 12 months.
Stalled fermentation at 1.040. One attempt to restart with another 2L starter of WLP540 (used shaking to properly aerate). Then noticed the liquid yeast had expired week before brewday, and was not taken into account. Second pitch with T-58 dry yeast (hydrated) finally did the trick.
Brewday October 1st, secondary fermentation/cold crash at 12'C started October 27th, bottling finally at November 13th.
Pullotettavaa oli 20 litraa. Pulloon saatiin 60x0,33L annosta. OG 1.096 ja FG nyt 1.024, näillä tiedoilla ABV ois 9,5%. Satsiin meni 200g vaahterasiirappia (10g/L) joilla pitäis päästä 3.0 CO2 tilavuuteen. Laitettiin myös pussillinen T-58 kuivahiivaa pullokäymisen varmistamiseksi. |

Og 1.073 @ 69 (1073) target was 1063 at 60% efficiency, got 70% and adjusted above
Did Hops wrong in 2nd runnings. Saaz went in at 60 and Nugget at 15

Bucket b(lue) = dme 550 brux, fg1014, 2nd FG after 2.5 months 1013, taste weird, maybe funk, needs more time! Starting to get funky, little slick? Strong boozy clovey weird
Bucket 2 = Farmhouse ,, 2.5months 1010or 1011. Banana clove but smooth, mid dark, nice belgian, not much funk
Bucket a = dme 550 Orval fg1019, 2nd FG 2.5 months later, 1013. Strong funk, funkiest and dirty in a good way, wow, most developed funk this early
Atenuated much more than expected
Target 1020, Wlp550 was at 1014/15 at 2 weeks (no Brett) and Farmhouse was 1011.
2ndary on May 19, 16days after bree
B after 2 more weeks with Brett, bubbly still looks like 1.014ish. tastes strong slight carbonation lots of banana, cooled and carbonated, strong banana nose, taste: strong clovey with banana and sweet malt (cloying?). Does not have extract taste. Not bad but not great, too much banana and clove and probably too sweet, dark and strong . Needs more carbonation as well. Did 30 psi shook two times over 3hrs

Notes: From Leah Dienes, owner/brewer at Apocalypse Brew Works in Louisville, Kentucky. First brewed this as a homebrewer in 1989, to recreate a smoked Hefeweizen she enjoyed in Bamburg, Germany.
This beer won multiple medals at homebrew competitions, including the President's Choice Award at the FOSSILS' Smoked Beer Competition.
The malts she used were from Weyermann. There is no info on water chemistry, so you might recreate the water chemistry from Bamburg, where this beer originated.
She brewed this with a step mash - starting at 148F and holding for 15 minutes, than raising it to 152 for the remainder of the 90 minute mash.
The original gravity target number is accurate - 1.053. Adjust brewhouse efficiency or grain bill to make it fit your system and process. |
