Notes: Large Yeast Starter- 2 gal boiled water/ 24.0 oz Light DME / 2 packs yeast (~60% viable) / 0.5 tsp yeast nutrient. Put starter in a bucket fermenter with a stir plate, occasionally stirring heavily during the first 24 hours.
Two-step infusion mash (133F/156F) with single liquid decoction for mashout temp.
Primary - Pitch at 46F, 4 weeks at 50F
Diacetyl Rest - 2 days at 68F
Rack and Ramp Down by 4F/Day to 34F
Lager - 16 weeks at 34F
Rack into Corny Keg and "Ice" at 28F for 24 hours
Push Liquid to New Keg; Measure ice volume when thawed

| Notes: Yeast starter is made with the two yeasts (WLP530+W3787) combined. This yeast starter will favour a drop of olive oil because of the extensive foaming. Main fermenter needs 50% head-space because of foaming of the yeast. Start of fermentation is within 4 hours after pitching the yeast. Main fermentation is at 22-24grC for 10 days. Plane table sugar (beet or cane doesn't matter) is used and is added 72 hours after start of fermentation. Conditioning is for 21 days at room temperature. fermenting attenuation is 90%, what will result in a FG=1008g/l. Bottling in champagne bottles and ageing for 3-6 months. Cheers! |

Notes: This is a delicious recipe. I love this Witbier. However, the process was time consuming, and the yield was low. I will definitely brew this beer again. Perhaps the next time I may use a different mash schedule and see if I can step up the yield.
I initially used the multiple steps. I would like to see if I can make a similar beer with a single infusion mash. I am not sure if the raw oats and flaked wheat would need a different treatment. |

Sweet wort currently in cube to chill and settle will ferment in 1-2 weeks time and dilute down to OG of appx 1060 to make it a bit more sensible to put on a tap!
