Notes: Mash 2-row and caramel malt in a single infusion style mash at 147F for 60 minutes.
Sparge with 170F water and lauter to reach pre-boil volume (between 6.5/7.5 gal dependent on your equipment).
Boil for 60 minutes, add first hop addition at beginning of boil. Add whirlfloc tab with 15 minutes remaining.
Add flameout hop additions at end of boil when flame is turned off, steep for 15 minutes before cooling to 65F.
Ferment at 65F. Allow temperature to rise to 70F on day 3 of fermentation.
When terminal gravity is reached add one half of dry hops. After 3 days add remaining dry hops. After another 3 days cold crash to 32F and condition for 2-3 days.
After beer clears, bottle or keg.

NOTE: Recipe source states OG of 1.079. With a standard 75% efficiency value, a 17lb malt bill comes out much higher. Modify the pale malt to suit your efficiency. |

Notes: This is an easy recipe to make a solid wort for a Gueuze/Lambic wort. The fun is to brew this every year. The Belgian sour mix from White Labs will do a good job getting the flavors For the style picked. Each home brewers home will create its own "house character". Once you add this to your brewing schedule you will look forward to brewing this beer every year.
A fifteenth minute boil is all you need to sanitize the wort and get some IBU's into the wort. It is the aging the beer that will challenge you!
Maltodextrin will be food for the bugs after the fermentable sugars are gone.

Notes: Attempted to mash on Friday and boil on Saturday. Rinsed mash tun out and put still-warm wort in to try to retain heat overnight. Rested at around 40. Next day the wort was still 32C. However it looked strange, smelt like a strong honey and tasted a little sour. Infection, probably lacto.
Boiled and hopped it anyway, in the hope that the boiling (75mins) would rid it of any nasties. Boil went fine, but finished product still has a sourness to it.
Yeast pitched. To test when fermented out. Options then: dry hop; rack onto some brett; throw away.
Fermented for quite a long time - 11 days. No activity for 3 days, so on Sun 1st Feb I racked off to secondary. Took sample and tasted. SG 1.016 Contiunues to have all the qualities of a sour in terms of appearance, aroma and taste.
Decided to rack onto a fuckload of hops anyways.
Options - bottle all in 7 days; bottle half and rack half onto some Brett, and leave for a few months....
Chose to bottle half and rack half for a further long feentation on some White Labs Brettanomyces Lambicus |
