Notes: Lower ABV IPA featuring Mckenzie hops. Going to add a little white wheat to the malt to add some more softness complexity without using crystal malts.
Will use ascorbic acid in the mash and with dry hop/kegging. Will also look to use ALDC enzyme when dry hopping. Want to use with pitch but won't be here in time for brew day. |

Notes: Poor efficiency. Unable to get good mash re-circulation so couldn't get mash temp above 62. Grain milled to 0.76mm, try coarser mill size next time. Furthermore, unable to mash out to 77deg C. so needed to add 2kg of cane sugar (15%) to raise to target FG of 1.100. Fermented at 19deg. C at 5 PSI.
Krausen starting to subside by day 7. Added 50g of Chinook.

Hold Mash for 60 Min
Boil for 60 min
MAKE SURE TO ADD GLUCOAMYLASE TO MASH AND NOT TO FERMENTER OR YOU HAVE TO SANITIZE WITH HEAT AND REPLACE SEALS.
Add grain to 8.5 gallons water at 153°F for a target mash of 147°F. Hold mash temp for 60 minutes. Recirculate mash until wort is free from large amounts of grain. Drain off wort into boil kettle
for approximately 8 gallons (sparge as needed). Boil for 60 minutes, adding hops at 15 minutes and flameout as specified. Drain off ~6 gallons of wort to fermenter. Add glucoamylase to wort as directed (NOTE: glucoamylase is denatured at higher temperatures. Do NOT add to kettle). Pitch yeast as directed. After terminal gravity is reached, add dry hops and crash after two days. Package to higher carbonation (~2.7- 3 Volumes CO2).

Notes: Ferment for 18 days at 66 degrees. Diecytl rest at 170 after high krausen subsides. Dry hop for 14 days then crash to 34 degrees, add biotin and rack to keg.
*UPDATE: made this twice now, and it is officially my go-to standard IPA. Great body, hops add a citrus and mild herbiness, nice malt sweetness from the crystal. |
