Notes: Use 4.5 gallons (17 L) carbon filtered water, adjust with 4 grams gypsum.
Step mash: 45 minutes at 150°F (66°C), ramp to 170°F (77°C) over 15 minutes (or ramp by infusing 2.5 gallons boiling water), rest 10 minutes at 170°F (77°C).
Vorlauf until clear.
Collect 6.6 gallons (25 L), sparging with 175°F (79°C) water. Boil vigorously for approximately 75 minutes, hopping as in ingredients section.
Whirlpool and allow to settle for 15 minutes. Chill wort to 64°F (18°C). Aerate wort and pitch yeast.
Ferment warm (ale temperature). Dry hop one week into fermentation.
Allow two hearted clone to stay warm with hops for a week.
Rack beer, crash cool, and cold age for a week.
Rack beer, prime with sugar and bottle.

Notes: This is a great beer when fermented at 70 f or less; my most common crowd pleasing brew in fact. But Ringwood is a temperamental yeast. Fermenting a higher og version of this beer at 72 has resulted in a beer so funky that it is basically undrinkable. Be careful with this yeast, even at high ibus. |

♦ SESSION NOTES:
Started with 7.60 gals. Had to add 1/2 gallon of water in the kettle to get 5.50 gallons. Transferred to SS Brew Bucket but it only registered at 5 gallons. Added boiled water to brew bucket to 5.50 gallons. Change my OG from 1.062 to 1.055. We are going to recalibrate kettle volume indicator levels again.
Phantom had UK Pale instead of UK Mild.
♦ STANDARD BREWING NOTES:
Turn off water softener. Purge water faucet.
Create 7 gallons sparge water. Bring to 154° strike temperature.
Prime pump. Push water through hose.
60 minutes – Add tablespoon 5.2 pH balancer.
Add grain – Sparge at 144-152° for ___ minutes (Minimum 60)
(One gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment.
Mash Option dark beers – Add x tablespoon Calcium Carbonate

♥ DRINKABILITY: What did you like about it. Sample Date: 08.06.15 Not sure if I like it. It's light in color. It has a light maltiness and a sour after finish. Not sure why. Was it using Fuggles? Might be a better drink in a few weeks after aging.

Tasting Notes: Roasty, malt forward but dry finish. Modeled after Smithwicks, the "gold standard"
My house Irish Red ale. It is best after 4 months of aging, so I brew 10 gallon batches and re-brew when the first keg kicks. The key to this style is malt forward but with a roasty, dry finish. Hop flavor is barely noticeable and there is no hop aroma. If you can lager, even better, use a clean lager yeast (eg. WLP840, WLP833). I only do ales though so I pitch Wyeast 1272, and ferment on the low end of the range to suppress ester production. Wyeast 1272 American Ale II is a nice, clean ale yeast that accentuates malt character. WLP051 is an exact sub for this yeast (it is the Anchor Liberty strain). If you use dry yeast, Nottingham or US-05 will work fine for this style, but if using the dry I recommend increasing the mash temp to 152*F.
This style should be crystal clear in the glass and shine ruby red when held up to a light. If you bottle condition, I recommend a two week secondary followed by pitching some English yeast like a half package of S-04 in the bottling bucket so the beer finishes nice and clear in the bottle.

Notes: 4/9/15: started yeast starter at 7:30pm. 1800ml water and 1 cup dry malt extract.
Brix 10.0 sg 1.040
Used 16g of yeast (1-1/2) packets.
4/11/15: Preheat mash tuns with 1-1/2 gallon boiling water for 30 min.
Boiled 3-1/2 gallons strike water to 168 degreed. Added grains and mash went to 155 degrees. Added 1 quart ice water and dropped to desired 152 degrees.For mashout added 6.5 quarts boiling water. Only raised it to 166 degrees. Let sit for 10 min.
Transfered to kettle and boiled. Added 1oz Perle for 60 min. ! oz of Sterling for 20 min and 1 oz Sterling for 10 min.
Cooled to 55 degrees and racked to fermenter. Added yeast and set freezer to 50 degrees. Initial Brix 10.8
4/21: Removed from freezer for diacetyl rest in basement. 61 degrees in basement.
4/23: transfered to secondary. SG reading of 1.010. Set Temperature in Freezer to 50 degrees
4/24: lowered freezer to 47 degrees
4/25: lowered to 44 degrees
4/26: lowered to 40 degrees
4/27: lowered to 37 degrees
4/28: lowered to 34 degrees
5/28: raised to 50 degrees in prep of bottling next day
5/29: Boiled 2 cups water and added 3.5 oz of corn sugar.
Transfered to bottle bucket. Final SG reading 1.006
