Tastes very good, It's malty, sweet and citrusy. I would not change anything on the grain bill (maybe some sugar to dry it out), or yeast (but any clean yeast would work as well lager or ale). The Voss adds more of an Orange flavor than Lemon, but it really goes well with the rest of the beer. Would be willing to try out some other hops. I want to add more lemon flavor somehow... Maybe a tincture? Lets say 1-3 lemons zest in 1/2 quart of vodka for at least 24hrs shaken every so often? and add to bottling bucket until I'm pleased with the flavor/aroma.
Pre-brewing notes:
Going for a very crisp finish, and lemon flavor in this cream ale from the hops, the yeast, and the zest of one large lemon during the hop stand. Plan to under pitch the Voss and keep the fermenter at ~85F to push the lemon/citrus flavors it can produce. Also going for a very low PH in the final product.
Will add sugar at end of boil to get to ~1.052 OG if needed. |

Of course, add your whirlfloc and yeast nutrient. (This isn't an overly thick beer, we'd want to dry this out as much as possible.)
Nice starter of White Labs WLP530 Abbey Ale, or pitch at least two vials, and aerate the crap out of it. Hit it with O2 if you have a tank/diffusion stone.
Give it about 3 weeks in primary, keeping it above 70 degrees for the yeasties to do their thing. Rack when it hits 1.012.
Here's where I get fuzzy. Vinnie says that when this comes off to secondary, he removes the yeast. I'm assuming he's doing that by pasteurization? Either way, I doubt it'd ruin the beer if it's just racked as you normally would.
You'll need a bigger carboy than 5 gallons, to accommodate the cherries, so grab yourself a 6.5 gallon one.
Into secondary, dump a package of Brett, and give it another couple of weeks.
Into secondary, dump 2.0 lb mashed cherries, as well as a package of Belgian Sour Mix 1. For a full effect, soak 1oz of oak chips in some pinot, and add those to the secondary as well. Let that chill for 2-3 months.
Rack to a keg, stash for 6 months before carbing.
Hugely labour intensive beer, and man, if I tapped that keg after a year or so and it tasted like arse, I wouldn't be a happy bunny! |

Punk IPA. Amplified. In 2010 we finally got our paws on the equipment we needed to dry hop our beers. We focused all our energy on dry hopping, amping up the aroma and flavour of our flagship beer to create a relentless explosion of tropical fruits, and adding a hint of Caramalt to balance out the insane amount of hops. To get the best possible profile from the dry hops we recommend dry hopping post fermentation for 5 days. Dry hops should be added at cellar temperature. We find 14°C results in the most aromatic dry hop profile.

Modified for 5 gal. From the Easter Quad recipe by Michael Tonsmeire in AHA.
Make a 1.5 L yeast starter with White Labs WLP530 Abbey Ale or Wyeast Trappist High Gravity 3787 using a stir plate.
Saccharification Rest: 60 minutes at 152°F (67°C).
Batch sparged with 180°F (82°C). Collect 9 gallons of 1.092 runnings including 1 lbs of table sugar added to the boil, plus 1 gallon of final runnings (boiled separately on the stove).
Chill to 63°F (17°C), 60 seconds of oxygen. Pitch the starter. Leave at 63°F (17°C) to ferment. Warm to 70°F (21°C) after 3 days.
Add Cinnamon Sticks after Primary Fermentation
When fermentation is complete, package as desired aiming for 2.4 vol of CO2.
Dough-in cold at approx. 70 F with 24 qt H20
Slowly raise temp to 148 F and rest 75 minutes
Mashout 170 F for 10 minutes

21/11/19 - Mashed Thursday afternoon, for Saturday afternoon boil
- 13 ml of Lactic acid added to bring pH down to pH 4.7 then added 2/3 of a little tub of yogurt and left in heat wrap without temp control.
23/11/19 - pH 3.79 after 44 hrs, tastes mildly sour with slight funk aroma, could be a bit more sour next time, boiled for 30.
30/11/19 - Dry hopped, SG: 1012.
3/12/19 - Added 1.5kg frozen mango
8/12/19 - Kegged and carbed
15/12/19 - Lots of lemon and lime citrus flavours, could do with a bit more gas, not a heap of mango up front but subtle hint in the middle. |
